Gluten Free Vanilla Cupcakes

1.In a medium bowl, combine coconut flour, salt and baking soda 2
- ½ cup coconut flour, sifted
- ½ teaspoon celtic sea salt
- ¼ teaspoon baking soda
- 6 eggs
- ½ cup grapeseed oil
- ½ cup agave nectar
- 1 tablespoon vanilla extract
Beet, Apple and Fennel Salad

Grate the beets, and fennel and apple keep in separate bowls
- 1/2 cup maple pecans or walnuts
- 1 raw beet peeled and coarsely grated
- 1 Fuji apple peeled and, grated
- 1 fennel bulb, trimmed and grated
- 1/2 cup fresh mint, chopped (can sub with basil)
- 2 tablespoons balsamic vinegar
- 1/4 cup Vega EFA oil
Buffalo Chicken Pot Pie

We all love this "Buffalo style" Chicken Pot Pie
- 2-3 skinless chicken breasts, poached
- 1 large onion, chopped
- 3 tbsp EVOO, divided
- 2 carrots, chopped bite-sized
- 3 stalks celery, chopped bite-sized
- 2 cloves garlic, grated
- 4 tbsp butter
- 4 tbsp flour
- 2 1/2 cups chicken stock
- 1/4 cup hot sauce
- Salt and freshly ground black pepper
- 1-2 boxes cornbread mix
Cauliflower popcorn (raw)

Cut cauliflower into small pieces, put in a ziploc bag and shake with desired amounts of remaining ingredients
- 1 Head Cauliflower
- Nutritional Yeast
- Cayenne
- Sea Salt
White Bean Mash

1. Sort through beans and remove any stones
- 2 cups (500 mL) white or red kidney beans
- 3 cloves garlic
- ½ small onion
- ½ cup (125 mL) hot vegetable stock
- 2 tbsp (25 mL) chopped fresh sage
- 3 tbsp (45 mL) drained, chopped, oil-packed sun-dried tomatoes
- 2 tbsp (25 mL) chopped fresh basil or Italian parsley
- ½ tsp (2 mL) salt
- Pinch pepper
Coconut Oil Fudge

over very low heat melt the coconut oil
- 1/2 cup coconut oil
- 1/3 cup honey (originally 1/2 cup-too sweet)
- 1/3 cup cocoa powder
- 1/4 tsp sea salt
- 1/2 tsp vanilla extract
Healthy Chocolate Pudding

In blender or food processor (magic bullet works great!) blend everything with about 1 cup of the water
- 10 dried dates, pitted and quartered
- 10 dried figs, stems removed and quartered
- 2 Tbsp unsweetened cocoa powder
- 2 Tbsp raw nut butter-almond, cashew or peanut
- 1 tsp vanilla extract
- 1 1/2 to 2 cups water, for desired consistancy
Lemonade

- 4 lemons
- 1 cup raw brown sugar
- 3 3/4 cups boiling water
Coconut Kream

White, sweet, rich kream full of coconut flavor
- 3/4 cup shredded coconut, ground into powder
- 3/4 cup cashews, ground into powder
- 3/4 cup water
- 1/4 cup + 2 Tbsp liquid coconut oil
- 1/4 cup + 1 Tbsp agave syrup
Creamy Poppy Seed Dressing

Whisk together all ingredients for the dressing
- 1/4 c low-fat plain yogurt
- 1 Tbsp grapeseed or olive oil
- 1 tsp each lemon juice and poppy seeds
- 1/2 to 1 tsp honey (depending on your taste)
- Pinch salt and pepper
