Key Lime Icing
- 2 cups coconut cream*
- ½ cup maple syrup
- ¼ cup lime zest (3-4 limes)
*To make coconut cream take “full fat” Organic Coconut Milk and place it in the fridge for some time or best over night. Scoop out all the thickened coconut cream, Don’t discard the leftover water, use it to drink or in a shake.
In a large bowl, whip the cream, maple syrup and lime zest with a hand held mixer until the cream forms soft peaks. Spread on your favorite cake or cupcakes
