Cheesy Lunchtime Vegan Oats

Directions: Mix all ingredients together in a pot and bring to a boil
- Toppings:
- 1/2 cup regular oats
- 1 cup water
- 1/2 cup almond milk
- 1 tablespoon olive oil
- 1 tablespoon nutritional yeast (the cheeze factor!)
- 1/6 block vegetable bouillon cube (or to taste!)
- Dash or two of turmeric
- herb seasoning
- Salt, if necessary
- Mary’s Crackers, crunched up
- 1/2 avocado
- Salsa
- Pepper strips
- Parsly
- Hummus
Quesadillas-unda style

This recipe makes a single quesadilla, feel free to scale it depending on how many you'd like to make
- zest of one small lemon
- a generous dollop of creme fraiche, sour cream or Greek yogurt
- fine grain sea salt
- 2 heaping tablespoons capers
- small splash of olive oil
- 1 small egg
- 1 corn tortilla, room temperature
- a bit of freshly shaved Parmesan
- chopped fresh chives or marjoram
Crunchy Chicken Tenders with Herb Buttermilk Dressing

Heat oven to 400 degrees. Line a baking sheet with a wire rack
- FOR THE CHICKEN
- 1 cup buttermilk
- 1 tablespoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cayenne pepper
- 2 pounds boneless, skinless chicken breast, pounded to even thickness, cut into strips
- 2 cups whole wheat breadcrumbs
- Olive oil, for drizzling
- FOR THE DRESSING
- 1/3 cup buttermilk
- 3 tablespoons 2% Greek yogurt
- 1 tablespoons chives, minced
- 1/4 teaspoon kosher salt
- FOR SERVING
- 4 stalks celery, cut into sticks
- 2 romaine hearts, quartered
- Hot sauce to taste
Sunny Dill Cheeze

- 2 cups sunflower seeds
- juice of 1 lemon (2Tbsp)
- 3 cloves garlic
- 1 bunch dill
- 1/2 cup water as needed
Mango Lime Lassi

Place everything in blender and puree until smooth
- 1 cups frozen Mango Chunks
- 1 1/2 cups plain yogurt
- 1/2 cup orange juice
- 1 1/2 Tbsp honey
- 2 tsp fresh lime juice
- mint leaves

- mint sprigs
The Best Pizza Dough

In a mixing bowl, combine the warm water and yeast
- 2 cups all purpose flour
- 1 1/2 cups whole wheat flour
- 1 tbsp olive oil
- 1 1/3 cup warm water
- 1 packet yeast
- 1.5 tsp sea salt
Pumpkin Gingerbread Banana Soft Serve

Process in food processor until smooth and lump free
- 1 frozen banana,
- 1 tbsp almond milk,
- 3 tbsp canned pumpkin,
- 1 tsp blackstrap molasses,
- 1 tsp pumpkin pie spice.
Lemon, Basil Dressing

- 1 cup of basil
- 1/3 cup lemon juice
- 3 tbsp. tahini
- 1/2 cup water
- 2 tbsp. tamari
Falafel with Avocado Spread

To prepare patties, place pinto beans in a medium bowl; partially mash with a fork
- PATTIES:
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1/2 cup (2 ounces) shredded Monterey Jack cheese
- 1/4 cup finely crushed baked tortilla chips (about 3/4 ounce)
- 2 tablespoons finely chopped green onions
- 1 tablespoon finely chopped cilantro
- 1/8 teaspoon ground cumin
- 1 large egg white
- 1 1/2 teaspoons canola oil
- SPREAD:
- 1/4 cup mashed peeled avocado
- 2 tablespoons finely chopped tomato
- 1 tablespoon finely chopped red onion
- 2 tablespoons fat-free sour cream
- 1 teaspoon fresh lime juice
- 1/8 teaspoon salt
- REMAINING INGREDIENTS:
- 2 (6-inch) pitas, each cut in half crosswise
- 4 thin red onion slices, separated into rings

- ½ c. cilantro leaves
