Lemon-Broccoli Rice with Chicken

Philadelphia Cooking Creme recipe
- 1 Tbsp oil
- 1 lb boneless skinless chicken breasts, cut into strips
- 1 clove garlic, minced
- 1/4 tsp ground black pepper
- 1 tub (10oz) Philadelphia Original Cooking Creme
- 2 cups frozen broccoli florets, thawed
- 2 tsp lemon zest
- 2 cups hot cooked rice
Instant Pot Italian Soup

Turn the instant pot on sautee and add the sausage and onions with the lid open
- 1 lb Italian sausage
- 1/2 cup minced onion
- 1 cup frozen peas
- 1 cup chopped carrots
- 1 cup cubed potatoes
- 1 can (15oz) stewed tomatoes with basil, oregano and garlic
- (you can also use a can of diced or chopped tomatoes)
- 32 ounces beef broth
Marinated Grilled Vegetables

- 2 small red sweet bell peppers

- 2 c low-sodium chicken broth
- 1 c crushed tomatoes
- 1 to 2 tsp red pepper flakes, to taste
- 1 1/2 oz (about a heaping 1/3 cup)finely grated Parmesan cheese
- 4 oz (1 cup) coarsely grated Fontina cheese
- 4 oz thinly sliced prosciutto, chopped

1. In a medium bowl, toss shrimp with salt, pepper, and juice from one lime
- 1 pound jumbo shrimp
- 3 limes
- Salt and pepper, to taste
