Panko Parmesan Zucchini Fries

- 3 3 3 Tbsp all-purpose flour
- 1/2 1/2 1/2 tsp garlic powder
- 1/2 1/2 1/2 tsp onion powder
- 1/4 1/4 1/4 tsp dry mustard
- 1/4 1/4 1/4 tsp ground black pepper
- 1/8 1/8 1/8 tsp cayenne pepper
- 3/4 3/4 3/4 C low-fat buttermilk
- 1-1/2 1-1/2 1-1/2 C panko bread crumbs
- 1/2 1/2 1/2 C grated Parmesan cheese
- 1 1 1 Tbsp olive oil
- Vegetable oil cooking spray
- 1/4 1/4 1/4 tsp salt
Make-Ahead Mashed Potatoes

Cook potatoes in large saucepan of boiling water 10 to 15 minutes or until tender; drain
- 4 lb white or Yukon gold potatoes (about 10), peeled, cubed
- 1 cup reduced fat light sour cream
- 1/2 cup 1/3 less fat than cream cheese
- 2 tsp onion powder
- 1 slice bacon, cooked and crumbled
- 2 green onions, sliced
Surprise Inside Meatballs

Soak the bread crumbs in milk for 10 minutes
- 1 cup fresh bread crumbs
- 1/3 cup milk
- 4 Tbsp olive oil
- 1 med onion, finely chopped
- 1/2 cup each ground beef, ground pork and ground veal
- 1 egg, lightly beaten
- 4 Tbsp freshly grated Parmigiano Reggiano
- 4 Tbsp chopped fresh parsley
- 3 Tbsp chopped fresh basil
- 24 - 2 oz fresh mozzarella balls

- 2 envelopes unflavored gelatin, about 2 tablespoons
- 1/2 cup Stoli Vodka
- 1/4 cup Cointreau

Tilapia with Green Beans

Combine the flour, oregano and parsley in a shallow dish
- 2 Tbsp all-purpose flour
- 2 tsp chopped fresh oregano, plus more for garnish
- 2 Tbsp chopped fresh parsley
- Kosher salt and freshly ground pepper
- 4 6-oz tilapia fillets
- 4 Tbsp unsalted butter
- 1/2 pound thin green beans or haricots verts
- 1 clove garlic, chopped
- 1 cup grape or cherry tomatoes, halved
- Juice of 1 lemon

Honey Garlic Chicken

1. In a medium bowl, combine the soy sauce, honey, garlic, basil, chili flakes and black pepper
- – 1-1/2 pounds bone-in skin-on chicken thighs (about 6 to 8 thighs)
- – 1 pound baby red potatoes, halved
- – 1 pound small whole carrots, cleaned and stems removed
- – 1 pound green beans, trimmed
- – 1/2 cup soy sauce
- – 1/2 cup honey
- – 1-1/2 teaspoons dried basil
- – 1/2 teaspoon chili flakes
- – 1/2 teaspoons black pepper, plus more to taste
- – 8 cloves garlic, minced
Sauteed Medallions of Pork with Apples and Goat Cheese

Take the goat cheese out of the refrigerator 15 minutes prior to cooking
- 2 oz goat cheese, sliced
- 1 lb pork boneless center loin
- 1 Granny Smith apple, medium-sized
- 1 to 2 Tbsp soy or vegetable oil
