Cranberry-Pineapple Pork Chops Recipe

In a large skillet, cook pork in oil for 8-10 minutes on each side or until a meat thermometer reaches 160°
- 4 boneless pork loin chops (1 inch thick and 6 ounces each)
- 1 tablespoon canola oil
- 1 can (20 ounces) unsweetened pineapple tidbits
- 1/2 cup sugar
- 4 teaspoons cornstarch
- 1 can (6 ounces) unsweetened pineapple juice
- 2 tablespoons butter
- 1/3 cup dried cranberries

- 7 strips of bacon, cut into 1/4-inch strips
- 1 onion, chopped
- 2/3 cup ketchup
- 3 T. dark or light brown sugar
- 2/3 cup maple syrup
- 1/8 tsp. cayenne pepper
- Salt and black pepper, to taste
- 3 cans (15 ounces each) pinto beans, drained and rinsed.Do not use canned white beans as they will turn to mush, use pinto beans

Cook noodles according to package directions
- 2 cups uncooked yolk-free whole wheat noodles
- 2 cups sliced fresh mushrooms
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
- 3/4 cup spaghetti sauce
- 2 cups cubed cooked chicken breast
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1/4 cup shredded Parmesan cheese
- 1-1/2 teaspoons Italian seasoning
- 1/2 cup shredded part-skim mozzarella cheese

Sweet & Sour Pork with Vegetables

- 3 T. vegetable oil
- 2 pork tenderloins sliced into thin stir fry pieces
- 1 large onion, thinly slice
- 3 large carrots, peeled, sliced
- 3 medium zucchini(about 1 1/2 pounds), sliced
- 2 large sweet green peppers, seeded, cored, sliced
- 1 tsp. salt
- 1 can (8 ounces) pineapple chunks in juice, drained and juice reserved
- 1 can (6 ounces) pineapple juice
- 1/3 cup ketchup
- 3 T. distilled white vinegar
- 3 T. reduced-sodium soy sauce
- 3 T. packed light-brown sugar
- 2 T. cornstarch
Tagliatelle Bolognese

First tried 3/8/2015. David and Nadine staying and served this for dinner
- 2 ounces dried porcini mushrooms, wiped of grit
- 2 tablespoons extra-virgin olive oil
- 1/4 pound pancetta or slab bacon, finely chopped
- 1 medium onion, finely chopped
- 2 celery stalks, finely chopped
- 2 carrots, finely chopped
- 5 garlic cloves, minced
- 4 fresh thyme sprigs, leaves stripped from the stem
- 2 fresh oregano sprigs, leaves stripped from the stem
- 1 fresh rosemary sprig, needles stripped from the stem
- 2 bay leaves
- 1 pound ground pork
- 1 pound ground beef
- 1 cup milk
- 1 (28-ounce) can whole peeled tomatoes, hand-crushed
- 2 cups dry red wine
- Kosher salt and freshly ground black pepper
- 1 pound dry tagiatelle pasta or any wide pasta.
- 1 handful fresh basil, hand-torn, for garnish
- Freshly grated Parmigiano-Reggiano, for serving
Lime Marinade

Mix ingredients, add chicken and marinate for at least 2 hours
- 1 T. grated lime peel
- 1/2 cup lime juice
- 3 T. salad oil
- 4 tsp. salt
- 1/4 tsp. cracked pepper

- Marinade:
- 2 T. white wine vinegar
- 2 T. fresh lime juice
- 1 T. vegetable oil
- 1 T. Worcestershire sauce
- 1 T. chopped onion
- 1 clove garlic, minced
- 1/2 tsp. salt, optional
- 1/2 tsp. dried oregano
- 1/4 tsp.ground cumin
- 1 pound boneless chicken breasts, sliced into pieces
- Green and red peppers sliced thin
- Medium onion, sliced thin
- 6 flour tortillas (8 inches)
- salsa, guacamole,sour cream and shredded cheddar cheese for tortilla fillings

- 1 1/2 cups sugar, divided
- 2 extra-large eggs, at room temperature

- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
