  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 2 cups shredded unpeeled zucchini (one cup cooked, mashed zucchini may be substituted for the 2 cups of raw shredded.
  • 1 cup chopped nuts (optional)
  • 1 cup raisins (optional) or mix some raisins and some chocolate bits
  • 3 eggs
  • 1 cup oil
