Dijon Shrimp

- 1 lb. peeled and deveined shrimp
- 1 tsp. olive oil
- 1/2 cup sherry
- 5 T. Dijon mustard
- 1 T. heavy cream
- Freshly ground black pepper
- 2 T. snipped chives
Creamy Slow Cooker Marsala Pork

Stir together the flour, rosemary, mustard, salt, garlic powder, and pepper in a bowl
- 1 cup flour
- 1 tablespoon minced fresh rosemary
- 1 teaspoon dry mustard powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 6 (4 ounce) pork chops
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 1 (4 ounce) package sliced mushrooms
- 1 clove garlic, minced
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup Marsala wine
Classic Cabbage Rolls Recipe

In a Dutch oven, cook cabbage in boiling water for 10 minutes or until outer leaves are tender; drain
- 1 medium head cabbage
- 1-1/2 cups chopped onion, divided
- 1 tablespoon butter
- 2 cans (14-1/2 ounces each) Italian stewed tomatoes
- 4 garlic cloves, minced
- 2 tablespoons brown sugar
- 1-1/2 teaspoons salt, divided
- 1 cup cooked rice
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1/4 teaspoon pepper
- 1 pound lean ground beef (90% lean)
- 1/4 pound bulk Italian sausage
- 1/2 cup V8 juice, optional
In-a-Pinch Chicken & Spinach Recipe

First tried 6/16/16. Excellent and easy
- 4 boneless skinless chicken breast halves (6 ounces each)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 package (6 ounces) fresh baby spinach
- 1 cup salsa
- 1 . Pound chicken with a meat mallet to 1/2-in. thickness. In a large skillet, heat oil and butter over medium heat. Cook chicken 5-6 minutes on each side or until no longer pink. Remove and keep warm.
- 2 . Add spinach and salsa to pan; cook and stir 3-4 minutes or just until spinach is wilted. Serve with chicken. Yield: 4 servings.
Lime-Honey Fruit Salad Recipe

First tried 2/12/18. Very good
- 1 tsp. cornstarch
- 1/4 cup lime juice
- 1/4 cup honey
- 1/2 tsp. poppy seeds
- 3 medium Gala or Red Delicious apples, cubed
- 2 medium pears, cubed
- 2 cups seedless red grapes ( I cut them in half)
- 2 cups green grapes (cut in half)
Quiche Muffins by the Dozen

First tried 2/2018. Can be frozen ( they freeze and reheat better than the South Beach sausage muffin cups)
- 2 2 2 slices bacon or ham, chopped
- 3 3 3 cups chopped spinach
- 1/2 1/2 1/2 cup chopped tomato
- 2 2 2 green onions, chopped
- 8 8 8 large eggs
- 2 2 2 T. unsweetened almond milk, milk or water
- 1/4 1/4 1/4 tsp crushed red pepper flakes
- 3 3 3 T. shredded Parmesan cheese (optional)
Meatball-Tortellini Soup

First made 2/12/2014, excellent flavor
- 8 ounces ground turkey
- 1/4 cup grated Parmesan cheese, plus more for topping
- 1/4 cup chopped fresh parsley, divided
- 1 large egg lightly beaten
- 1 clove garlic, grated
- Kosher salt and freshly ground pepper
- 2 T. extra-virgin olive oil
- 2 carrots, diced
- 2 stalks celery, diced
- 1 quart chicken broth
- 3 cups water
- 9-ounce package cheese tortellini
- 4 cups loosely packed baby spinach (about 3 ounces)
Turkey Potpies Recipe

In a large saucepan, saute the onion, carrot, potato and celery in butter until tender
- 1 small onion, chopped
- 1 medium carrot, chopped
- 1/2 cup diced peeled potato
- 1/4 cup chopped celery
- 1/4 cup butter, cubed
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon dried parsley flakes
- 1/4 teaspoon dried rosemary, crushed
- 1/4 teaspoon rubbed sage
- 1/4 teaspoon pepper
- 1 cup 2% milk
- 1 cup chicken broth
- 2 cups cubed cooked turkey
- 1/2 cup frozen peas

Slow Cooker Vegetable Soup

Easy and delicious
- 1 pound boneless round steak, cut into 1/2 inch cubes
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 3 cups water
- 2 medium potatoes, peeled and cubed
- 2 medium onions, diced
- 3 celery ribs, sliced
- 2 carrots, sliced
- 3 beef bouillon cubes
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. salt, optional
- 1/4 tsp. pepper
- 1-1/2 cups frozen mixed vegetables
