Chicken Piccata with Pasta & Mushrooms

Preparation Bring a large pot of water to a boil
- Ingredients
- 6 ounces whole-wheat angel hair pasta
- 1/3 cup all-purpose flour, divided
- 2 cups reduced-sodium chicken broth
- 1/2 tsp. salt, divided
- 1/4 tsp. freshly ground pepper
- 4 chicken cutlets, (3/4-1 pound total), trimmed
- 3 tsp. extra-virgin olive oil, divided
- 1 10-ounce package mushrooms, sliced
- 3 large cloves garlic, minced
- 1/2 cup white wine
- 2 T. lemon juice
- 1/4 cup chopped fresh parsley
- 2 T. capers, rinsed
- 2 tsp. butter
Creamy Fish Chowder

I doubled the recipe and used haddock for the fish
- 1 * 1 slice bacon, diced
- 1 * 1 small onion, chopped
- 1 * 1 stalk celery, chopped
- 1 * 1 clove garlic, minced
- 1 * 1 cup bottled clam juice, or reduced-sodium chicken broth (see Tips for Two)
- 8 * 8 ounces tilapia or Pacific cod fillets, cut into 1-inch cubes
- 2 * 2 small russet potatoes, peeled and diced (about 2 cups)
- 1 * 1 teaspoon chopped fresh thyme, or 1/4 teaspoon dried
- 1 * 1 bay leaf
- 2/3 * 2/3 cup low-fat milk
- 1 * 1 tablespoon water
- 2 * 2 teaspoons cornstarch
- 1/8 * 1/8 teaspoon freshly ground pepper
- 2 * 2 teaspoons chopped fresh parsley, (optional)
Chicken Tenders with Honey Mustard

Sauce: 1. In a bowl, stir together the honey and mustard
- Sauce:
- 1/4 cup honey
- 3 T. Dijon mustard
- ders:
- 4 skinless, boneless chicken breasts ( 1 1/4 pounds total).
- 1 sleeve (about 4 ounces) Ritz crackers
- 1 clove garlic, finely chopped
- 2 T. chopped fresh parsley
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. paprika
- 1 egg
- 1 T. cold water
- 1/4 cup honey

First tried for Super Bowl Sunday-2/4/2018
- One 8 ounce can original crescent dough
- 1/4 cup Dijon mustard
- 20 mini hot dogs or cocktail franks
- 1 egg, lightly beaten
- Poppy seeds or sesame seeds
- Tangy Dipping Sauce- recipe below
- TANGY DIPPING SAUCE
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 3 T. Dijon mustard
- 1 T. whole grain mustard
Filet Mignon in Mustard-Balsamic Vinegar Sauce

About 30 minutes before serving: 1
- 1 T. olive oil
- 6 beef tenderloin steaks (filet mignon) each about 1 1/2 inch thick. ( I have used this recipe with 2-4 steaks)
- 1/4 chicken broth
- 2 T. balsamic vinegar
- 1 T. Dijon mustard
Beef Burgundy Recipe

In a 5-qt. slow cooker, combine the first 10 ingredients
- 1-1/2 pounds beef stew meat, cut into 1-inch cubes
- 1/2 pound whole fresh mushrooms, halved
- 4 medium carrots, chopped
- 1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
- 1 large onion, cut into thin wedges
- 1/2 cup Burgundy wine or beef broth
- 1/4 cup quick-cooking tapioca
- 1/2 teaspoon salt
- 1/4 teaspoon dried thyme
- 1/4 teaspoon pepper
- Hot cooked egg noodles

- 10 ounces dried campanelle pasta, spaghetti, or bow-ties (about 3 cups) see savings
- 1-1/2 pounds cooked, peeled, and deveined shrimp see savings
- 1 cup chopped celery see savings
- 1/2 cup chopped red onion see savings
- 1/2 cup chopped green sweet pepper see savings
- 1 2-1/4-ounce can sliced pitted ripe olives, drained see savings

Strawberry Sour Cream Muffins

First tried 6/17/2015. Makes great muffins, very tasty
- 2 eggs
- 1 cup sour cream
- 1 cup sugar
- 1/2 cup melted butter
- 1 tsp. vanilla
- 2 cups flour, plus extra for dusting strawberries
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup fresh strawberries, coarsely chopped
- 2 tsp. coarse sugar for sprinkling

First tried 7/6/2015. Delicious, did not make a lot of sauce, increased broth to 1 cup
- 4 boneless skinless chicken breast halves (1 pound)
- 1/4 cup all-purpose flour
- 3 tablespoons butter, divided
- 1 cup sliced fresh mushrooms
- 1/2 - 1 cup chicken broth
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/3 cup shredded part-skim mozzarella cheese
- 1/3 cup grated Parmesan cheese
- 1/4 cup sliced green onions
Gruyere Potato Gratin

1. Preheat oven to 400 degrees
- 1 T. butter or margarine
- 1 cup half and half or light cream
- 1-1/4 tsp. salt
- 1/4 tsp. ground red pepper (cayenne)
- 2 pounds baking potatoes, peeled and thinly sliced

- 4 ounces Gruyere cheese, shredded (1 cup)
