French Onion Salisbury Steak

First made 8-5-2012. If you want a different way to cook hamburger this is the recipe
- For the steak:
- 1-1/4 pound ground chuck
- 1/4 cup minced fresh parsley
- 2 T. minced scallions
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 2 T. all-purpose flour
- For the sauce:
- 1 T. olive oil
- 2 cups sliced onions
- 1 tsp. sugar
- 1 T. minced garlic
- 1 T. tomato paste
- 2 cups low-sodium beef broth
- 1/4 cup dry red wine
- 3/4 tsp. kosher salt
- 1/2 tsp dried thyme
- Cheese toasts
- Minced fresh parsley
- Shredded Parmesan
- Cheese Toasts:
- 4 slices Italian baguette, cut diagonally (1/2-inch thick)
- 2 T. unsalted butter, room temperature
- 1/2 tsp. minced garlic
- Pinch of paprika
- 1/4 cup shredded Swiss cheese
- 1 T. shredded Parmesan

- 1 2-1/2- to 3-pound broiler-fryer chicken, quartered see savings
- 1/2 cup white Zinfandel wine, apple juice, or apple cider see savings
- 1/4 cup olive oil or cooking oil see savings
- 1/4 cup honey see savings
- 1/4 cup Dijon-style mustard see savings
- 1/2 teaspoon black pepper see savings
- 1/4 teaspoon salt see savings
- 4 cloves garlic, minced see savings

Sausage, Mushroom & Spinach Lasagna

Preparation Preheat oven to 350°F
- Ingredients
- 8 ounces whole-wheat lasagna noodles
- 1 pound lean spicy Italian turkey sausage, casings removed (see Variation)
- 4 cups sliced mushrooms, (10 ounces)
- 1/4 cup water
- 1 pound frozen spinach, thawed
- 1 28-ounce can crushed tomatoes, preferably chunky
- 1/4 cup chopped fresh basil
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 1 pound part-skim ricotta cheese, (2 cups)
- 8 ounces part-skim mozzarella cheese, shredded (about 2 cups), divided

- 1 tsp. sugar 1 tsp. ginger
- 1/2 cup lemon juice
- 2 cloves garlic
Italian Green Beans with Parmesan Bread Crumbs

- 2 2 2 T. olive oil
- 1 1 1 clove garlic, minced
- 2 2 2 pounds green beans trimmed
- 2 2 2 T. coarse bread crumbs
- 2 2 2 T. grated Parmesan Cheese
Bacon-Fat-Fried Shrimp

- 3 strips of bacon
- 2 shallots, chopped
- 1 red bell pepper, chopped
- 1 pound jumbo shrimp peeled and deveined
- 1/2 cup dry white wine
Pork Tenderloin with Peaches & Pecan Sauce

Excellent 4-4-2011. Used 2 pork tenderloins and did not double the sauce ingredients, not necessary
- 1 T. olive oil
- 1 pork tenderloin, cut into 3/4 inch slices
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1 can (10-3/4 ounces) Campbell's Condensed Golden Mushroom Soup
- 1 can (about 15 ounces) sliced peaches in juice, drained, reserving juice
- 3 T. low-sodium soy sauce
- 2 T. honey
- 1/4 cup pecan halves, toasted and broken into large pieces
- Hot cooked rice
Baked Chicken Chimichangas Recipe

In a small bowl, combine the chicken, 3/4 cup picante sauce, cheese, 1/4 cup onions, cumin and oregano
- 1-1/2 cups cubed cooked chicken breast
- 1-1/2 cups picante sauce, divided
- 1/2 cup shredded reduced-fat cheddar cheese
- 2/3 cup chopped green onions, divided
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 6 flour tortillas (8 inches), warmed
- 1 tablespoon butter, melted
Black Bean Chicken with Rice Recipe

Combine the chili powder, cumin, pepper and salt; rub over chicken
- 3 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon salt
- 4 boneless skinless chicken breast halves (4 ounces each)
- 2 teaspoons canola oil
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup salsa
- 2 cups cooked brown rice
