Pork Tenderloin with Raspberry Sauce

- Pork Tenderloin-2 or 3 depending on number of guests
- 6 T. red raspberry preserves, seedless
- 2 T. red wine vinegar
- 1 T. ketchup
- 1/2 tsp. horseradish
- 1/2 tsp. soy sauce
- 1 clove garlic minced

- 2 - 14 ounce cans diced tomatoes
- 1 small onion chopped
- 1 teaspoon dried basil
- 1 1/2 cups cornbread stuffing mix
- TOPPING
- 1 1/2 cups shredded cheddar cheese
- 1 cup mayonnaise
- 1/4 cup cornbread stuffing mix

In a large bowl, cream butter and sugar until light and fluffy
- 1-1/4 cups butter, softened
- 1-1/2 cups sugar

- 1 teaspoon vanilla extract

- 1 teaspoon baking powder

- 2 T. dijon mustard
- 1/4 cup brown sugar
- Salt and pepper to season

Maple Glazed Carrots

- 1 1 1 T. unsalted butter
- 1 1 1 shallot, minced
- 1/4 1/4 1/4 cup water
- 1/4 1/4 1/4 cup pure maple syrup, dark or amber
- 1/2 1/2 to tsp.salt, or to taste
- 1/4 1/4 1/4 tsp. ground cinnamon
- 5 5 1/4 5 sliced carrots, about 1/4 inch thick (about 5 large carrots)

Beef Stroganoff w/Egg Noodles

- 1 tablespoon extra virgin olive oil
- 4 pounds beef chuck roast (well trimmed & cut into 2 inch cubes) used sirloin tips
- 2 cup diced onion
- 2 cups quartered mushrooms
- 1/2 cup sifted flour
- 1 tablespoon fresh garlic, minced
- 1/2 cup tomato puree
- 1 teaspoon fresh thyme, minced
- 2 tablespoons brown sugar
- 1 cup chardonnay
- 3 cups beef stock
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup sour cream
- 2 tablespoons chopped chives
Creamy Orzo

- 1 pound orzo(rice shaped pasta)
- 2 T. olive oil
- 1 large shallot, finely chopped
- 1 clove garlic,minced
- 1 (14.5 ounce) can diced tomatoes, juices drained
