Shrimp Quesdadillas

Great recipe and easy. Also freezes well
- 3 slices bacon, cut into 1/2 inch pieces
- 1 cup chopped red bell pepper
- 1/3 cup sliced scallions, including tender green tops
- 3/4 tsp. ground cumin seed
- 1 pound small, peeled and deveined shrimp(can use raw large shrimp and after peeling and deveining chop them into small pieces)
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 4 cups shredded Monterey Jack cheese
- Four 10-inch flour tortillas
- 2 About 2 T. of olive oil, for brushing the quesdillas
Pina Colada Fruit Salad Recipe

In a serving bowl, combine the first six ingredients
- 1-1/2 cups green grapes
- 1-1/2 cups seedless red grapes
- 1-1/2 cups fresh blueberries
- 1-1/2 cups halved fresh strawberries
- 1 can (8 ounces) pineapple chunks, drained
- 1/2 cup fresh raspberries
- 1 can (10 ounces) frozen non-alcoholic pina colada mix, thawed
- 1/2 cup sugar
- 1/2 cup pineapple-orange juice
- 1/8 teaspoon almond extract
- 1/8 teaspoon coconut extract
Chicken Fajitas Recipe

In a large resealable plastic bag, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken
- 4 tablespoons canola oil, divided
- 2 tablespoons lemon juice
- 1-1/2 teaspoons seasoned salt
- 1-1/2 teaspoons dried oregano
- 1-1/2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed red pepper flakes, optional
- 1-1/2 pounds boneless skinless chicken breast, cut into thin strips
- 1/2 medium sweet red pepper, julienned
- 1/2 medium green pepper, julienned
- 4 green onions, thinly sliced
- 1/2 cup chopped onion
- 6 flour tortillas (8 inches), warmed
- Shredded cheddar cheese, taco sauce, salsa, guacamole and sour cream
Salsa Skillet Pork Chops

First tried 8/20/2013. Easy, super quick and excellent
- 6 boneless pork loin chops (6 oz. each)
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups fresh whole kernel corn or frozen can be used, thaw a bit
- 1 can (15 oz.) pinto beans, drained and rinsed
- 1-1/4 cups chunky salsa
- 2 T. water
- 1 tsp. ground cumin
Stovetop Orzo Medley

Great as a side dish or add cooked chicken pieces to make a meal
- 8 ounces orzo
- 2 shallots
- 12 oz. snow peas
- 8 oz. sliced fresh mushrooms
- 1/4 cup pine nuts
- 1 T. olive oil
- 2 T. butter
- 1 sweet red pepper, chopped
- 2 cups cooked chopped chicken (optional)

1. Preheat oven to 350 degrees F
- 1 3/4 cups Kellogg's® Corn Flake Crumbs
- 1 egg
- 1 cup fat-free milk
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 pounds broiler chicken pieces rinsed and dried
- 3 tablespoons margarine melted
Herbed Artichoke Cheese Tortellini Recipe

Drain tomatoes, reserving 2/3 cup juice; set aside
- 2 cans (14-1/2 ounces each) Italian diced tomatoes
- 2 jars (6-1/2 ounces each) marinated quartered artichoke hearts
- 2 packages (9 ounces each) refrigerated cheese tortellini
- 2 cups chopped onions
- 1/2 cup minced fresh parsley
- 2 to 4 tablespoons minced fresh or 2 to 4 teaspoons dried basil
- 2 teaspoons minced garlic
- 1/2 teaspoon dried oregano
- 1/8 teaspoon crushed red pepper flakes
- 1/2 cup olive oil
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1/2 teaspoon salt
- 1/4 cup shredded Parmesan cheese
Boursin Creamed Spinach

First made 7/22/2012. Easy and delicious
- For the spinach filling:
- 1/2 cup diced onion
- 1 T. unsalted butter
- 2 T. all-purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 1 pkg. Boursin Garlic & Fine Herbs cheese (5.2 oz.)
- 1 pkg.frozen chopped spinach, thawed and squeezed dry of excess moisture (10 oz.)
- 2 T. grated Parmesan
- 1 tsp. minced lemon zest
- Salt, white pepper, cayenne pepper, and ground nutmeg to taste.
- For the crumb topping:
- 2/3 cup coarse fresh bread crumbs (made from 2 slices firm white bread)
- 1 T. unsalted butter, melted
- 1 T. olive oil
- Salt and black pepper to taste.
Maple Glazed Chicken Breasts

1. Whisk syrup, soy sauce, lemon juice, garlic, ginger and pepper in a small, shallow dish
- 2 T. pure maple syrup
- 1 T. reduced-sodium soy sauce
- 2 tsp. lemon juice
- 1 clove garlic-minced
- 1 tsp. minced fresh ginger
- 1/4 tsp. freshly ground pepper
- 2 boneless,skinless chicken breasts
