Broccolli Casserole

I make this every Thanksgiving
- 3 boxes frozen chopped broccolli
- 1 Can cream mushroom soup
- 4 oz shredded cheddar
- 3/4 C mayo
- 2 eggs - beaten
- Salt to taste
- 1/2 C butter - melted
- Crumbled Ritz Crackers
Louisiana Hot Crab Dip

Preheat oven to 325F. Combine all of the ingredients in a casserole dish and gently stir until thoroughly mixed
- 1/2 # jumbo lump crabmeat, free of shells
- 1 ( 8 oz) pkg cream cheese
- 1/2 cup mayonnaise
- 1/4 cup grated parmesan
- 3 Tbl minced green onions (white & green parts)
- 2 Lg garlic cloves, minced
- 2 tsp Worcestershire sauce
- 2 Tbl fresh lemon juice
- 1 tsp hot sauce
- 1/2 tsp Old Bay seasoning
- salt & pepper to taste
Chicken Wings - Asian

Best chicken wings I ever had
- 5 # chicken wings
- 1 TBL Emeril's Original Essence
- 1 tsp salt
- 1/2 tsp ground white pepper
- 2 cups freshly squeezed orange juice (I use Tropicana)
- 1 cup pineapple juice
- 1 cup sugar
- 1/2 cup soy sauce
- 1/2 cup mirin (sweetend rice wine) ***
- 2 TBL orange zest
- 2 TBL minced garlic
- 2 TBL minced fresh ginger
- 1 TBL sesame oil
- 2 TBL minced green onion
- 3/4 tsp crushed red pepper
- 2 TBL sesame seeds
- 2 TBL chopped fresh cilantro, for garnish
- substitute for mirin: dry sherry or sweet marsala
Beef Stew

All I can say is that this is the best stew I've ever had
- 3 # Stewing beef, cut in bite size pieces
- 1 Bay Leaf
- Garlic Powder
- 1 T Sugar
- Allspice
- Onion
- Pepper to taste
- 1 T Worsteschire Sauce
- 1 T Salt
- Carrots
- 5-6 medium potatoes, peeled and cut in small pieces
- 3 C boiling water
White Queso Dip

In a double broiler on low heat (enough to keep a gentle boil), add the cheese and some of the half & half
- 1 # white American cheese (a good brand)
- 1 Cup half & half
- 2 T diced jalapenos
- 1/2 t cumin
- 1/4 t salt
- 1/4 t black pepper
- 1/4 t red pepper
- 1 dash chili powder
Christmas Fudge

Place marshmallow, chips & vanilla in large heat resistant bowl
- 1/2 # (2 sticks ) butter
- 1 can evaporated milk
- 5 C sugar
- 1 1/2 jars (7 oz) Marshmallow Cream
- 1 1/2 (12 oz) semi-sweet Nestle chips
- 2 t vanilla
Chicken Tortilla Soup

Heat oven to 400F. Cut 2 tortillas into strips; toss with 1/2 tsp oil
- 6 corn tortillas (6 inch) divided
- 1 1/2 tsp oil, divided
- 1/2 lb boneless skinless chicken breasts, cut into bite size pieces
- 2 cans (14 oz each) chicken broth
- 1 cup medium salsa (for less zip, use mild salsa)
- 1 cup frozen corn
- 1 cup shredded cheddar cheese

Boil the boullion cubes in the 12 cups water
- 12 chicken bouillon cubes
- 12 cups water
- Broccolli - about three heads, chopped
- Large Velveeta (3#)
- 1 1/2 cups Accini de Pepi pasta
Cheddar Biscuits

Yummy biscuits on a fall day with a bowl of soup or stew
- 2 C Jiffy or Bisquick Mix
- 2/3 C Milk
- 1 C cheddar cheese
- 1/2 stick butter
- 1/2 t garlic salt
Wild Mushroom Pasta Sauce

Crumble the dried mushrooms into a glass bowl or measuring cup and pour the boiling broth over them
- 1 1/2-oz package wild mushrooms
- 1 cup chicken, vegetable or beef broth, boiling
- 1 cup white wine
- 2 TBL butter, divided
- 3 8-oz packages of white button or portobello mushrooms, washed & chopped
- 4 large shallots, minced
- 4 large cloves of garlic, minced
- 2 TBL chopped sage
- 3 TBL flour
- 1/2 cup chopped flat-leaf parsley
- salt & fresh ground black pepper
