Cheese Soup - Bavarian
- 7 oz cheese ( American or cheddar) finely grated
- 6 cups broth (chicken or vegetable)
- 4 T butter
- 4 T flour
- 6 pcs toast
- Ground nutmeg to taste
- Herbs to taste
- salt & pepper to taste
Preparation time 5mins
Cooking time 30mins

Melt the butter in a saucepan and brown the flour.
Pour in the broth, stirring, & cook for 5-7 minutes.
Add the cheese & nutmeg; salt & pepper to taste.
Put the toast on the bottom of the dish & pour the soup over. Garnish with herbs to taste.
