Ziti with Chicken and Broccoli

•Sprinkle chicken with pepper and 1/8 teaspoon salt
- 1 pound boneless skinless chicken breasts, cut into 1/2-inch strips
- 1/2 teaspoon pepper
- 1/4 teaspoon salt, divided
- 2 tablespoons butter, divided
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon dried oregano
- 2 cups reduced-sodium chicken broth
- 1 cup fat-free milk
- 2-1/2 cups uncooked ziti
- 1 bunch broccoli, cut into florets
- 1 cup julienned roasted sweet red peppers
- 1/2 cup grated Parmesan cheese
Gaaaaaahlic Bread

- 1 loaf french or Italian bread about 22 inches
- 12 tablespoons unsalted butter, softened
- 2 tablespoons extra virgin olive oil
- 1/2 cup grated parmesan cheese
- 2 teaspoons BAM
- 2 teaspoons garlic, minced
- 1 teaspoon dried parsley
- 1/4 teaspoon salt
Veggie Muffins

Beat egg in a large bowl. Add orange juice, applesauce, and sugar
- 1 egg
- 3/4 c orange juice
- 1/2 c applesauce
- 1/4 c sugar
- 1 c white flour
- 1 c whole wheat flour
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1 t cinnamon
- 1 c shredded carrot
- 1 c shredded zucchini
- 1/2 c raisins
Hearty Potato Soup

- 4 c low sodium chicken broth
- 1 T sherry
- 2/3 c chopped green onion
- 3 med sized cloves garlic minced
- 1/2 c coarsely chopped celery
- 1/2 c finely grated carrot

Tuna Mushroom Casserole

- 1 package wide egg noodles (12oz), cooked and drained
- 2 cans tuna (6oz ea), drained
- 1 can mushrooms stems and pieces(4oz), drained
- 1 can cream of mushroom soup
- 1 1/3 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup crushed saltines
- 3 tablespoons butter or margarine, melted
- Paprika
Maple Garlic Marinated Pork Tenderloin

Herbed Garlic Bread

Preheat oven to 350 degrees F
- 1 stick butter (1/2 cup), at room temperature
- 2 garlic cloves, mashed to a paste with a pinch of salt and extra-virgin olive oil
- 2 tablespoons chopped parsley leaves
- 2 tablespoons chopped fresh basil leaves
- Kosher salt and freshly ground black pepper
- 1 loaf crusty baguette

Plum Topped Custard Tartlets

Heat half and half to a simmer in med saucepan over med heat
- 1 c half and half
- 2 eggs
- 1 T all purpose flour
- 1/2 c plus 1 T granulated sugar, divided
- 1/2 t vanilla
- 1/2 c whipping cream
- 1 10 oz package of frozen puff pastry shells (6)baked according to package directions
- 1 T butter
- 2 large firm red plums, unpeeled, halved, pitted and sliced into thin wedges
- 2 T brown sugar
Onion Garlic Bubble Bread

- 1 loaf (1 lb) frozen bread dough, thawed
- 1/2 c finely chopped sweet onion
- 1/2 c butter melted
- 2 garlic cloves, minced
- 1 t dried parsley flakes
- 1/4 t salt

- 3/4 c bottled Italian dressing
- 1/2 t garlic salt
- 1/2 t salt
- 1/4 t pepper
- 10 mushrooms thinly sliced
- 4 green onions, sliced
- 2 med cucumbers, peeled and thinly sliced
- 1/2 c chopped parsley
- 1 med green pepper, seeded and cut into thin strips
- 3 large tomatoes, cut into thin wedges
- 6 oz swiss cheese, cut into thin strips
- 4 hard boiled eggs, sliced
