Chicken Parmigiana

Preheat the oven to 350 degrees F
- 1/4 cup extra-virgin olive oil, plus 3 tablespoons
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 bay leaves
- 1/2 cup kalamata olives, pitted
- 1/2 bunch fresh basil leaves
- 2 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
- Pinch sugar
- Pinch red pepper flakes
- Kosher salt and freshly ground black pepper
- 4 skinless, boneless, chicken breasts (about 1 1/2 pounds)
- 1/2 cup all-purpose flour

- 1 cup dried plain bread crumbs
- 1 cup freshly grated Parmesan, plus extra for sprinkling

Molasses Sugar Cookies

Cream shortening and sugar together until light and fluffy
- 1 1/2 c shortening
- 2 c sugar
- 2 eggs
- 1/2 c molasses
- 4 c flour
- 4 t baking soda
- 1/2 t salt
- 1 t cinnamon
- 1 t ginger
- 1 t allspice(I subbed this for cloves)
- extra sugar in a bowl
White Chocolate Bread Pudding

- 2 c whole milk
- 1 c sugar
- 1 3/4 qt heavy cream
- 1 1/4 lbs white chocolate, chopped
- 4 eggs
- 15 egg yolks
- 1 loaf day old French bread, cut into 1 in slices

Coconut Pound Cake

Preheat oven to 325. Arrange an oven rack in the center of the oven
- 1 c butter room temp
- 2 1/2 c sugar
- 4 large eggs
- 2 t coconut extract
- 1 t vanilla
- 1/2 c milk
- 2 1/4 c flour
- 1 t baking powder
- 1/2 t kosher salt
- 1 c shredded coconut
- Glaze
- 2 T butter, melted
- 1 1/2 c powdered sugar
- 2 T milk
- 1 t coconut extract
- Topping
- 2/3 c shredded coconut, toasted if desired
Potato Casserole

Boil potatoes until done. Beat with electric beater
- 4 lbs potatoes, peeled
- 1 8oz pkg cream cheese
- 1 c sour cream
- 2 t salt
- 1/8 t pepper
- 1 garlic clove, chopped
- 1/4 c chopped chives
- 2 t butter
- 1/2 t paprika
Melt In Your Mouth Shortbread

Preheat the oven to 375. Whip butter with an electric mixer until fluffy
- 1 c butter softened
- 1/2 c confectioners sugar
- 1/4 c cornstarch

This is an old family favorite and the recipe makes alot
- 1 can whole corn
- 1 can black olives
- 2 14 oz cans of Italian style stewed tomatoes
- 1 each bell pepper chopped
- garlic powder to taste
- 1 each onion chopped
- salt and pepper to taste
- 1 can creamed corn
- 1 pound wide egg noodles
- shredded cheddar cheese
- 1 1/2 pounds hamburger
Pork Chop Marsala

RINSE pork chops and roll in flour until all sides are lightly coated; set aside
- 6 each pork loin chop
- 1/2 cup flour
- 3 tablespoons butter
- 3 tablespoons minced onions
- 2 cloves garlic minced
- 1/2 cup marsala wine
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- 1/2 teaspoon marjoram
- 1/2 teaspoon basil
- salt and pepper
Zucchini Cheese Casserole

DICE zucchini. Combine with onion and butter in skillet
- 1 1/2 pounds zucchini
- 1 small onion, chopped
- 2 tablespoons butter
- 1 can diced green chiles 4 oz
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups Monterey jack cheese, grated
- 1 each egg
- 2 tablespoons minced parsley
- 1/2 cup grated Parmesan cheese
- 1 cup cottage cheese
Lasagna Deliziosa (skinny)

Cook noodles according to package directions
- 9 uncooked lasagne noodles
- 1 pkg (19oz) Italian turkey sausage, casings removed
- 1/2 lb lean ground beef
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 can (28oz) diced tomatoes, undrained
- 1 can (12oz) tomato paste
- 1/4 c water
- 2 t sugar
- 1 t dried basil
- 1/2 fennel seed
- 1/4 t pepper
- 1 egg lightly beaten
- 1 carton (15oz) reduced fat ricotta cheese
- 1 T minced fresh parsley
- 1/2 t salt
- 2 cups (8oz)shredded part skim mozzarella cheese
- 3/4 c grated Parmesan cheese
