Roasted Sweet Potatoes

Preheat oven to 425. Place the potatoes on a large baking sheeet
- 2 1/2 lbs sweet potatoes, peeled and cut into large pieces
- 3 T extra virgin olive oil
- 1/2 t kosher salt
- 12 t freshly ground black pepper
- 1/4 t ground red pepper
- 1/4 t cinnamon
- 2 T snipped chives
Ham and Cheese Roll (anna snyder)

Using a bowl and a spatula (or mixer) mix together the cream cheese, cheddar, minced ham, onion, mustard and salt
- 16 oz cream1 cheese softened
- 1 1/2 c sharp white cheddar cheese, grated
- 1/4 c finely minced deli ham
- 1 T finely chopped onion
- 1 T Dijon mustard
- 1/4 t coarse salt
Mango Orange Mousse

Process enough of the mangoes in blender or food processor container fitted with metal blade to make 1 cup puree
- 1 28oz can mangoes or 2 small cans
- 1 envelope (1 T)unflavored gelatin
- 1/4 c cold water
- 3 eggs, room temp separated
- 3/4 c orange juice
- 1/2 c sugar, divided
- 1 T lemon juice
- dash salt
- 2 T rum
- 1 c whipping cream, divided
- shredded orange peel (optional)
Chicken Alfredo Lasagna

In a bowl combine the eggs, ricotta, 8 oz of the Italian cheese and blend well
- 12 oven ready lasagna noodles
- 2 15 oz jars of alfredo pasta sauce
- 2 1/2 c cooked chicken
- 16 oz shredded Italian blend cheese
- 15 oz ricotta cheese
- 2 eggs slightly beaten
- 1 c milk
- 1 10 oz bag of frozen spinach thawed and drained
Glazed Eggnog Monkey Bread

GREASE 12 cup bundt pan. Prepare the rum glaze and pour half into the pan; sprinkle with half of the pecans
- 2/3 cup water
- 2 each eggs
- 1/4 cup butter or margarine, softened
- 3 1/2 cups bread flour
- 1/3 cup sugar
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 1/2 teaspoons yeast
- Rum glaze
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon rum extract
- 1/2 cup chopped pecans if desired

- 2 c cubed peeled potatoes
- 2 c reduced sodium chicken broth
- 1 c chopped carrots
- 1/2 chopped onion
- 1 can cream style corn
- 1 can fat free evaporated milk
- 3/4 c shredded cheddar cheese
- 1/2 c sliced mushrooms
- 1/4 t pepper

Fettuccine Turkey Marsala

- 12 oz fettuccine pasta
- 2 T olive oil
- 1/2 c chopped onions
- 1 c quartered mushrooms
- 10 oz turkey teners or cutlets, thinly sliced
- 1 c cherry tomatoes, halved
- 2 t chopped fresh sage
- 1/4 c sweet marsala wine
- 1 1/2 c fat free half and half
- 1 pkg Knorr garlic and herb sauce mix
