Cranberry Arctic Frost Salad

Whip cream. Fold in nuts and pineapple
- 1 c whipping cream
- 1 c chopped nuts
- 1 c drained, crushed pineapple
- 1 16 oz can whole cranberries or whole berry cranberry sauce, drained
- 2 T mayonnaise
- 2 T granulated sugar
- 1 8oz pkg cream cheese
7 Layer Garden Salad

In see through serving bowl, layer the first 8 ingredients in the order of above
- 6 oz baby spinach
- 1 med red onion sliced
- 2 med carrots shredded
- 2 c halved grape tomatoes
- 1 med cucumber sliced
- 2 c corn
- 2 c shredded radicchio
- 2 c shredded romaine lettuce
- 3/4 c light Italian dressing
- 1/4 c chopped fresh basil
- 2 T grated Parmesan cheese
Enchilada Casser OLE

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 pound lean ground beef (90% lean)
- 1 large onion, chopped
- 2 cups salsa
- 1 can (15 ounces) black beans, rinsed and drained
- 1/4 cup reduced-fat Italian salad dressing
- 2 tablespoons reduced-sodium taco seasoning
- 1/4 teaspoon ground cumin
- 6 flour tortillas (8 inches)
- 3/4 cup reduced-fat sour cream
- 1 cup (4 ounces) shredded reduced-fat Mexican cheese blend
- 1 cup shredded lettuce
- 1 medium tomato, chopped
- 1/4 cup minced fresh cilantro
Roasted Baby Potatoes with Chimichurri Sauce

Preheat oven to 400. Toss potatoes with oil and salt and place in a single layer on a baking sheet
- 1 1/2 lbs Dutch baby, fingerling, or other small potatoes
- 1 t Extra Virgin olive oil
- 1/4 t salt
- Sauce
- 2 c lightly packed fresh basil leaves
- 1/4 c lightly packed parsley leaves
- 1/4 c lightly packed cilantro leaves
- 4 cloves garlic
- 1/2 c extra virgin olive oil
- 6 T red wine vinegar
- 1 t crushed red pepper flakes
- 1 t salt
Vanilla Spice Nuts

- 1 T vanilla

- 1 c sliced almonds
- 1 c pecan halves
- 1 c macadamia nuts
- 1/4 c sugar

Beef Osso Buco

- 1 3/4 t kosher salt divided
- 3 lbs cross cut bone in beef shanks
- 1 T canola oil divided

- 1 c uncooked tricolor spiral pasta
- 1/2 c chopped cucumber
- 1/2 c thinly sliced celery
- 1/2 c chopped red onion
- 1/2 c sliced radishes
- 1/2 c chopped tomatoes
- 1/2 c sliced black olives
- 1/2 c shredded swiss cheese
- 1/8 t garlic powder
- 1/8 t pepper
- 1 T Italian salad dressing mix
- 2 T plus 1 1/2 t cider vinegar
- 2 T olive oil
Vegetable Pie

In a med skillet, saute veggies in butter until crisp, but not soft
- 10 inch pie shell unbaked
- 1 onion sliced
- 2 yellow squash sliced
- 1 green pepper sliced
- 4 T butter
- 1 t salt
- 1/4 t black pepper
- dash garlic salt
- 1 tomato sliced
- 1 lb fresh mushrooms
- 1 c mayonnaise
- 1 c grated mozarella cheese
Olive Garden Spaghetti Carbonara

Melt butter in 4 qt heavy saucepan over med heat
- 1/4 c flour
- 1/4 c butter
- 1 quart milk
- 1/8 t pepper
- 1/2 t salt
- 24 slices of bacon, extra thick
- 1/4 c olive oil
- 3 c mushrooms, sliced
- 6 T scallions, minced
- 1 lb spaghetti, uncooked
- 2 t fresh parsley, finely chopped
- 1/2 c Parmesan cheese, freshly grated
