Baked Spaghetti

•In a large skillet, saute onion and green pepper in butter until tender
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 tablespoon butter
- 1 can (28 ounces) diced tomatoes, undrained
- 1 can (4 ounces) mushroom stems and pieces, drained
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 2 teaspoons dried oregano
- 1 pound ground beef, browned and drained, optional
- 12 ounces spaghetti, cooked and drained
- 2 cups (8 ounces) shredded cheddar cheese
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1/4 cup water
- 1/4 cup grated Parmesan cheese
Diet Coke Chicken Low Fat

In frying pan, pour liquids over chicken breasts and bring to a boil
- 1/2 cup Ketsup
- 1/2 cup salsa
- 1 12oz. can diet coke
- 4 chicken breasts ( about 3 oz. each )
Sausage Bread Dressing (skinny)

In a large bowl, combine stuffing cubes and stuffing mix
- 4 c seasoned stuffing cubes
- 1 c corn bread stuffing mix
- 1/2 lb bulk Italian sausage
- 1 large onion, chopped
- 1 large tart apple, peeled and chopped
- 1 1/3 c sliced fresh shitake mushrooms
- 1 1/4 c sliced fresh mushrooms
- 1 celery rib, chopped
- 1/8 t salt
- 1/8 t pepper
- 3 T butter
- 1 can chicken broth
- 1 c pecan halves
- 1/2 c minced fresh parsley
- 1 T fresh sage or 1 t dried sage
Pork Loin

Preheat oven to 400. Rub pork with all the other ingredients and place in roasting pan, fat side up
- 4-5 lb pork loin roast
- 2 T olive oil
- 1 T salt
- 1 T pepper
- 1 T garlic powder
- 1 T onion powder
Hot Spiced Pear Juice

Corn Cakes with Chives

In a small bowl combine flour, baking powder, sugar and salt; set aside
- 2 T all purpose flour
- 1 1/2 t baking powder
- 1 t sugar
- 1/2 t salt
- 1 c boiling water
- 1 c yellow corn meal
- 1/4 c milk
- 1/2 c whole kernel corn
- 1 slightly beaten egg
- 1 T snipped fresh chives
- 3 T cooking oil
- 1 r snipped fresh chives or cilantro (optional)
- 1/3 c sour cream
Carbonara Mac and Cheese Bites

cook elbow macaroni as directed on package
- 1 T olive oil
- 1/2 c panko bread crumbs
- 1/2 c shredded Parmesan cheese
- 6 oz elbow macaroni
- 10 oz jar of light alfredo sauce
- 2/3 c chicken broth
- 1 t dry mustard
- 1 1/2 c shredded sharp cheddar cheese + 1 c shredded sharp cheddar cheese
- 2 eggs
- 1/2 c fat free half and half
- 1/2 c crumbled bacon
Muenster Bread

IN a large mixing bowl, dissolve yeast in milk
- 2 packages dry yeast
- 1 cup warm milk
- 1/2 cup butter or margarine, softened
- 2 tablespoons sugar
- 1 teaspoon salt
- 3 1/4 cups flour, can add 1/2 cup more
- 1 each egg
- 1 each egg yolk
- 4 cups shredded Muenster cheese
- 1 each egg white, beaten
Apple Nachos (skinny)

Slice up the apples thin enough to eat in one or two bites
- 3 crispy and slightly tart apples (honey crisp is great)
- 1 t lemon juice
- 3 T creamy natural peanut butter
- 1/4 c sliced almonds
- 1/4 c pecans
- 1/4 c flaked unsweetened coconut
- 1/4 c vegan chocolate chips
Crispy Roasted Parmesan Potatoes

Slice potatoes into very thin slices (1/4in) and place in a big ziploc bag
- 2 large potatoes, scrubbed
- 3 T olive oil
- 1 T Italian seasoning
- 1 t salt
