Greek Quinoa Patties (skinny)

Combine cooked quionoa, eggs, and salt in a med bowl
- 2 1/2 c cooked quinoa, room temperature
- 4 large eggs, beaten
- 1/2 t salt
- 1/3 c finely chopped fresh chives
- 1 onion, finely chopped
- 1/3 c grated parmesan or gruyere cheese
- 3 cloves garlic, finely chopped
- 1 c whole grain bread crumbs, plus more if needed
- 1 T olive oil
Southwestern Macaroni Salad (skinny)

Cook pasta according to package directions
- 1 pkg 16oz uncooked elbow macaroni
- 1 lb cherry tomatoes, quartered
- 1 cup frozen corn, thawed
- 1 med green pepper, chopped
- 1 small red onion, chopped
- 1 can 2.25oz sliced ripe olives, drained
- 1/2 c lime juice
- 1/4 c olive oil
- 1 T red wine vinegar
- 1 T chili powder
- 1 T ground cumin
- 1 t sugar
- 1 t salt
- 1 t garlic powder
Creamy Wild Rice and Chicken Soup

Melt butter in pot over med heat
- 1/4 c butter
- 1/2 large yellow onion chopped
- 3 med carrots diced
- 8 oz mushrooms sliced
- 3 celery stalks diced
- 1 t salt
- 1/2 t pepper
- 3 c chicken cooked and shredded
- 4 c chicken stock
- 1 c heavy cream
- 1 T flour
- 1 c long grain and wild rice mix
Maple French Toast Bake

- 2 cans grands flaky biscuits
- 1 c sugar
- 1 T cinnamon
- 2 sticks of butter
Vanilla Cream Cheese Frosting

Irish Broccoli, Potato, and Cheddar Chowder

Melt butter in saucepan. Add leeks; cook for 5 minutes over med heat
- 2 T butter
- 1 large leek sliced white and pale green part only
- 1 1/2 lbs russet potatoes, peeled and cubed
- 3 c chicken stock
- 2 c coarsely chopped frozen broccoli, thawed
- 1 c fat free or reg half and half
- 1 7oz pkg Irish Swiss or Aged Cheddar cheese, shredded
