Greek Salad 2

COOK pasta al dente. Drain and combine with vegetables
- 1 package rotini pasta 12 oz
- 1 medium cucumber, sliced
- 3 medium tomatoes, sliced
- 1 medium red onion, sliced
- 1/2 cup Calamata olives
- 3 ounces feta cheese
- Dressing
- 1/4 cup red wine vinegar
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 1/4 cup parsley, chopped
- salt and pepper
Nancy's Gazpacho

This has to be done the day before
- 1/4 cup good olive oil
- 1-2 cloves garlic, minced
- 1 cup crustless bread, torn into small bits
- 2 pounds ripe tomatoes, quartered and cored (or large can of canned tomatoes)
- 1 large green pepper, seeded and chopped
- 8 scallions
- 1 large cucumber, peeled, seeded, and chopped
- 2 T tarragon vinegar (or plain white wine vinegar)
- 1 T fresh lemon juice
- 1/4 t dried tarragon (I don’t add this)
- 2 t kosher salt
- 1/2 t sugar
- 1/4 t freshly ground black pepper
- 1/4 t Tabasco or other hot sauce
- 2 cups chicken broth
- 1.5 cups tomato juice
- 1/4 cup white wine
Potato Gnocchi

To prepare sauce, heat olive oil in a med saucepan, add onion and garlic and cook for 5 min

- 1 T extra virgin olive oil
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1 29oz can crushed tomatoes
- 1/2 T sugar
- 1/2 t salt
- 1/4 t pepper
- Gnocchi
- 1 1/2 lb small unpeeled russet potatoes
- 1 1/4 c flour plus extra for kneeding
- 1 T butter
- 3/4 t salt
- 1 egg
- Shredded reggiano cheese
Slow Cooker Apricot BBQ Chicken Wings

Recommended to use a NON sweet version of BBQ sauce
- 4 lbs chicken wing drummettes, frozen
- 18 oz bottle BBQ sauce or approx. 2 c
- 1 c apricot preserves
- 1 t ginger powder
- 1 T garlic powder
- 2 T Worcestershire sauce

Beef Burgundy

- 2 1/2 pounds beef boneless butter or round steak, 1 inch thick
- 1/4 cup shortening
- 3 tablespoons flour
- 2 teaspoons salt
- 1/4 teaspoon marjoram
- 1/4 teaspoon thyme
- 1/8 teaspoon pepper
- 2 teaspoons instant beef bouillon
- 12 small onions, sliced
- 1 1/4 cups dry red wine
- 3/4 cup water
- 8 ounces mushrooms, cut into halves
- 1 tablespoon snipped parsley

Place flour, garlic powder, thyme, basil, 1/2 t salt, and 1/2 t black pepper in a plastic bag

- 8 oz boiling onions
- 5 med carrots, cut into 1 inch chunks
- 1 recipe polenta below
- 1/2 c snipped fresh parsley
- 1/4 c tomato paste

Pot Roast and Onions

Trim fat from roast. If necessary cut to fit in a slow cooker
- 2 to 2.5 lb boneless beef chuck roast
- 2 med onions, cut into wedges
- 8 oz tomato sauce
- 1/4 c water
- 1 T yellow mustard
- 1 to 2 t horseradish
- 1/2 t salt
- 1/4 t pepper
- 2 T flour
- 2 T cold water
