Slow Cooker Swedish Meatballs

- 1 1/2 c fresh bread crumbs
- 1 c milk
- 1 1/2 lbs ground chuck
- 1 1/2 lbs ground pork
- 2 eggs
- 11 med onion, chopped fine
- 1 3/4 t salt
- 1/4 t allspice
- 1/8 t nutmeg
- 1/8 t pepper
- 2 c beef stock
- 2 T butter, melted
- 2 T flour
Egg Drop Chicken

Mini Garlic Monkey Bread

Preheat oven to 400. Lightly grease a 12 cup muffin pan
- 16 oz can refrigerated buttermilk biscuits
- 6 T butter, melted
- 4 cloves garlic minced
- 2 T Italian seasoning
- 1/3 c parmesan cheese grated

Preheat oven to 350. Line the muffin pan with 24 cupcake papers
- one box Duncan Hines Family Style Chewy Fudge Brownie mix
- 24 miniature peanut butter cups
Grandaddy's Pot Roast

- 1 tablespoon bacon drippings (preferred), rendered beef fat, or unsalted butter
- 3 pounds boneless chuck roast or 5 pounds bone-in roast
- Salt and whole black pepper in a peppermill
- 2 About 2 cups beef broth or water
- 2 large yellow onions, trimmed, peeled, and thinly sliced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon unbleached, all-purpose flour
Barbecued Brisket

PLACE brisket in a large pot
- 4 pounds beef brisket, NOT CORNED BEEF
- 1 1/4 cups water, divided
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1 tablespoon oil
- 1 cup ketchup
- 3 tablespoons cider or red wine vinegar
- 2 tablespoons lemon juice
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons cornstarch
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon liquid smoke flavoring
Slow Cooker Beef Stroganoff Stew

In slow cooker, layer onion, garlic and beef
- 1 med onion
- 1 clove garlic, finely chopped
- 1 lb boneless beef tip steak, cut into 1/2 in pieces
- 2 cans (18 oz eac) Progresso vegetable Classics creamy mushroom soup
- 1/2 c water
- 2 1/2 c uncooked wide egg noodles (4oz)
- 1 c sour cream
- 2 T chopped fresh parsley if desired
Lowfat Blue Cheese Dressing

MIX together the vinegar, lemon juice and oil in a small bowl
- 1 cup white wine vinegar
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/2 teaspoon sugar
- 1/2 teaspoon dry mustard
- 1/4 teaspoon dried rosemary
- 1/2 teaspoon paprika
- 1 teaspoon fresh parsley, chopped
- 1/4 pound blue cheese, crumbled
Layered Ranchero Dip

- 2 cans jalapeno flavored bean dip
- 1 cup sour cream
- 2/3 cup mayonnaise
- 1 envelope taco seasoning mix
- 2 cans 4oz chopped green chilies
- 4 medium avocado
- 2 tablespoons lime juice
- 1 teaspoon salt
- 1/4 teaspoon garlic powder
- 2 cups shredded cheddar cheese

Tuna Artichoke Melts (skinny)

In a small bowl, combine tuna, artichokes, mayo, 1/4 c cheese, lemon pepper and oregano
- 1 can 6oz light water packed tuna, drained and flaked
- 1/3 c coarsely chopped water packed artichoke hearts
- 2 T fat free mayonnaise
- 1/2 c shredded reduced fat Mexican cheese blend, divided
- 1/4 t salt free lemon pepper seasoning
- 1/8 t dried oregano
- 2 English Muffins, split and toasted
