Irish Broccoli, Potato, and Cheddar Chowder

Ingredients
- 2 T butter
- 1 large leek sliced white and pale green part only
- 1 1/2 lbs russet potatoes, peeled and cubed
- 3 c chicken stock
- 2 c coarsely chopped frozen broccoli, thawed
- 1 c fat free or reg half and half
- 1 7oz pkg Irish Swiss or Aged Cheddar cheese, shredded

Preparation
Step 1
Melt butter in saucepan. Add leeks; cook for 5 minutes over med heat. Add potatoes and stock and bring to a boil. Reduce heat and simmer, covered, for 10 min.
Let cool slightly, then transfer to a food processor or use a stick blender to make smooth.
Return to pan and add broccoli and half and half; cook for 5 min more. Stir in cheese, a little at a time. Cook over low heat just until cheese is melted, stirring constantly.
