Hash Brown Breakfast Cups

Mix first three ingredients together and press into the bottom of muffin tins
- 20 oz frozen hashbrowns, thawed
- 1 cup shredded cheddar cheese

- 3 tablespoons orange juice concentrate
- 3 tablespoons vegetable oil, divided

- 4 each boned and skinned chicken breast halves
- 1/2 cup coarsely chopped walnuts

- 1/4 cup lemon juice
- 2 tablespoons honey
- 2 tablespoons grated orange peel

Easiest Lean Artichoke Chicken

Scatter the carrots over the bottom of the slow cooker and place the chicken in one layer on top
- 12 oz mini baby carrots
- 4 small boneless skinless chicken breasts

- 1/2 cup chopped red bell pepper
- 1/4 cup shredded Monterey jack cheese

- 1 bag of frozen tortellini
- 1 small bag of fresh spinach
- 2 cans of Italian style diced tomatoes
- 4 c vegetable broth

- 1 c shredded cheddar cheese
