Chicken Vera Cruz

Place onion in a slow cooker
- recipe parsley olive topping below:
- 1 med onion cut into wedges
- 1 lb yellow skin potatoes, cut into 1 in pieces
- 6 skinless boneless chicken thighs
- 2 14.5oz cans no salt added diced tomatoes
- 1 fresh jalapeno chile pepper, seeded and sliced
- 2 T worcestershire sauce
- 1 T chopped garlic
- 1 t dried oregano
- 1/4 t ground cinnamon
- 1/8 t ground cloves
- In a small bowl stir together 1/2 c snipped fresh parsley and 1/4 c stuffed green olives
Spicy Chex Chicken

1. Preheat oven to 350. In a freezer bag add corn chex and press until all of the corn chex are crumbs
- 1 cup buttermilk
- 4 each boneless skinless chicken breast
- 1 1/2 cups corn chex® crumbs
- 2 teaspoons onion powder
- 1 teaspoon garlic salt
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
Sunrise Muffins

Preheat the oven to 375. Coat a 12 cup muffin pan with spray
- Cooking spray
- 1 navel orange cut into eighths
- 1/2 c orange juice
- 1/4 c veg oil
- 1 1/2 c all purpose flour
- 3/4 c sugar
- 1 t baking powder
- 1 t baking soda
- 1 t kosher salt
- 1/2 c dried cranberries chopped
Apple Dumplings

- 2 cans crescent rolls
- 2 granny smith apples
- 1 stick butter
- ½ teaspoon cinnamon
- 1 1/3 cup splenda (or sugar)

Black Bean Enchilada Casserole

HEAT oven to 400. Brown ground beef in large skillet
- 1 pound lean ground beef
- 1 package taco seasoning mix
- 2/3 cup water
- 1 tablespoon oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can black beans 15oz, drained and rinsed
- 1 can enchilada sauce 10oz
- 1 can chopped green chiles 4.5oz
- 1/3 cup sour cream
- 8 each flour tortilla
- 1 cup cheddar cheese sharp, shredded
- 2 oz crumbled chevre cheese (goat)
- 1 cup thick and chunky salsa
- 3 each green onions, sliced
Turkey Meatball Soup (skinny)

In a bowl, combine the egg whites, bread crumbs, cheese and 2 T Italian seasoning
- 2 egg whites, lightly beaten
- 1/2 c seasoned bread crumbs
- 1 T grated Parmesan cheese
- 4 t Italian seasoning, divided
- 1 lb lean ground turkey
- 3 med carrots, sliced
- 3 celery ribs, finely chopped
- 1 T olive oil
- 4 garlic cloves, minced
- 3 cans reduced sodium chicken broth
- 1/4 t salt
- 1/2 c small pasta
Jolly Bourbon Balls

- 1 package vanilla wafers (3 cups), finely crushed
- 1 cup finely chopped nuts
- 1 cup powdered sugar, divided

- 2 c cubed cooked pork (about 1 lb)
- 1 can kidney beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1 can chili with beans, undrained

- 1 1/2 to 2 c green salsa
- 1 large onion, chopped
- 2 cans (4oz ea)green chiles, chopped
- 2 garlic cloves, minced

- 2 t ground cumin

Preheat oven to 350. Mix mayo, sour cream, and cream cheese in a bowl until thoroughly combined
- 1 lb bacon cooked
- 1 c mayonnaise
- 1 c sour cream
- 8 oz cream cheese, softened
- 1 1/2 c cheddar cheese
- 1 tomato seeded and chopped
- 1/4 c chopped green onions
- additional green onions, bacon, tomato, and lettuce for garnish if desired
