- Crumb Cake
- 1 1/2 c all purpose flour
- 3/4 c quaker oats, uncooked
- 3/4 c granulated sugar
- 1 t ground cinnamon
- 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t ground nutmeg
- 1/4 t salt
- 1/2 c butter, chilled
- 1/4 c part skim ricotta cheese
- 3/4 c nonfat or reduced fat sour cream
- 2 egg whites lightly beaten
- Filling
- 2 c chopped apple (about 2 medium)
- 1/3 c seedless raspberry jam
- 2/3 t all purpose flour
- powdered sugar

Artichoke Chicken

In a bowl, combine the artichokes, oil and garlic
- 2 cans (14oz ea)water packed artichoke hearts, rinsed and quartered
- 2 T olive oil
- 3 cloves garlic, minced
- 2 2/3 c cubed cooked chicken
- 2 cans cream of chicken soup, undiluted
- 1 c mayonnaise
- 1 t lemon juice
- 1/2 t curry powder
- 1 1/2 c shredded cheddar cheese
- 1 c seasoned bread crumbs
- 1/4 c grated parmesan cheese
- 2 T butter, melted
Maple Ginger Sweet Potatoes

In a slow cooker combine sweet potatoes, apples, dried cranberried, ginger, salt, cinnamon, nutmeg and pepper
- 1 1/2 lbs sweet potatoes, peeled and cut into bite size pieces
- 2 med tart cooking apples, such as Granny Smith, cored and chopped (about 2 cups)
- 1/4 c dried cranberries
- 1 1/2 t grated fresh ginger
- 1/2 t salt
- 1/2 t cinnamon
- 1/4 t ground nutmeg
- 1/8 t black pepper
- 1/2 c water
- 1/4 c light pancake syrup

- 1 tablespoon plus one teasp salt
- 1 pound sweet or mild Italian sausage, removed from casings
- 2 cups thinly sliced onion
- 1 tablespoon minced garlic
- 1/2 teaspoon pepper
- 1/4 cup extra virgin olive oil
- 2 tablespoons chopped fresh basil
- 1/2 cup grated parmesan cheese
Turkey Reubens

Place celery and onion in a crock pot
- 2 stalks celery, cut crosswise into thirds
- 1 med onion, cut into wedges
- 1 c water
- 1/2 t caraway seeds, crushed
- 1/4 t celery seeds
- 1/4 t salt
- 1/4 t black pepper
- 2 to 2 1/2 lbs bone in turkey breast halves
- 6 c shredded cabbage
- 2 c coarsley shredded carrots
- 6 slices rye bread
- 6 3/4 oz slices reduced fat swiss cheese
- 1/2 c bottled low fat thousand island dressing
Italian Pot Roast with Potatoes and Carrots

in a slow cooker, stir together the tomato paste, vinegar and flour until blended
- 1/4 c tomato paste
- 2 T balsamic vinegar
- 2 T flour
- 2 1/2 lb beef chuck roast, tied
- salt and pepper
- 1 lb carrots, cut on an angle into thick pieces
- 1 lb small red potatoes, skinned
- 8 oz small mushrooms
- 6 cloves garlic, halved
- 1 sprig of rosemary
Pork Tenderloin with Horseradish Sauce (skinny)

In a small bowl, combine the steak seasoning, rosemary, thyme; rub over meat
- 1/2 t steak seasoning
- 1/2 t dried rosemary
- 1/2 t dried thyme
- 1 pork tenderloin (3/4 lb)
- 2 garlic cloves, peeled and quartered
- 1 t balsamic vinegar
- 1 t olive oil
- Horseradish Sauce
- 2 T fat free mayo
- 2 T fat free sour cream
- 1 t horseradish
- 1/8 t grated lemon peel
- dash salt and pepper
