Meatball and Vegetable Stew

In a crockpot, place cooked meatballs and mixed vegetables
- 16-18 oz frozen package of cooked meatballs
- 1/2 of a 16oz package of loose packed frozen broccoli, corn, and red sweet peppers, or other mixed vegetables
- 14 1/2 oz can of diced tomatoes with onion and garlic
- 12 oz jar of mushroom gravy
- 1/3 c water
- 1 1/2 t dried basil
Simple Simon Spareribs

Trim excess fat from ribs and arrange them in a single layer in a large shallow pan
- 4 lbs country style spareribs
- 2/3 c white sauterne wine
- 3 T red wine vinegar
- 2/3 c packed brown sugar
- 1/4 c soy sauce
Buttermilk Ranch Dressing

Much better than the store brand
- 1/2 cup buttermilk
- 1/4 cup lowfat mayonnaise
- 2 T. white wine vinegar
- 1/2 t. granulated garlic
- 1/2 t. salt
- 1/2 t. pepper
- 1/3 cup chopped fresh chives
Pineapple Breeze

Combine all ingredients and pour over ice or use the frozen pineapple chunks instead of ice
- 2 oz pineapple rum
- 1 1/2 oz cranberry juice
- 1/2 oz orange juice
- twist of lime
- crushed ice

Skillet Chicken and Rice

- 3 T butter, divided
- 4 chicken thighs, skinned
- 2 c sliced fresh mushrooms
- 1/2 c chopped onion
- 1 c white rice uncooked
- 1 1/2 t dried basil
- 3 t dried parsely

- 1/2 c water

- 3 large russet potatoes, about 2 lb total, unpeeled and scrubbed
- 3/4 c minced shallots
- 2 1/2 c grated white cheddar cheese
- 2 t salt
- 1/4 t freshly ground pepper
- 1 1/2 c sour cream
Chicken Parisienne

- 4-6 med size chicken breasts
- 1 10 1/2oz can cream of mushroom soup
- 1 3oz can mushrooms and liquid
- 1 c sour cream
- 1/2 c cooking sherry
- paprika
- cooked rice
Hash Brown Casserole

This couldn't be any easier and is great for stay over guests
- 12 each eggs
- 1 can evaporated milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon cayenne pepper
- 1 package 30 ounce frozen shredded hash browns, thawed
- 2 cups shredded cheddar cheese
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 cup cubed fully cooked ham
Cranberry Crumb Cake

Preheat oven to 350. coat 9" springform pan with cooking spray
- 1 pkg yellow cake mix
- 1 c buttermillk
- 3 eggs
- 1/3 c + 1/2 c butter, at room temp
- 3 t grated orange zest
- 1 c whole berry cranberry sauce
- 1 1/2 c all purpose flour
- 3/4 c pakced light brown sugar
- 1 t ground cinnamon
- confectioners sugar, optional
Chipotle Burgers with Avocado Salsa

1.Preheat an outdoor grill for medium-high heat and lightly oil the grate
- 1 bunch fresh cilantro, chopped
- 1 pound ground beef
- 1 (7 ounce) can chipotle peppers in adobo sauce
- 1 cup chopped fresh mushrooms
- 1 tablespoon Worcestershire sauce
- 1 avocado - peeled, pitted, and diced
- 1 onion, diced
- 1 tomato, diced
- 2 jalapeno peppers, seeded and chopped
- 1 lime, juiced
- salt and ground black pepper to taste
