Quinoa with Zucchini and Onions

Always wash the Quinoa...
- 800 g of zucchini (courgettes), cut into 5mm thick slices
- a knob of butter
- 2 tablespoons of rapeseed or olive oil
- 3 onions, peeled, cut in half and then sliced thinly
- a few sprigs of thyme, leaves only
- 3 garlic cloves, finely chopped
- 200 g of quinoa
- a good handful of flat leaf parsley, roughly chopped
- a squeeze of lemon juice
- 50 g of pine nuts, lightly toasted
- sea salt and freshly ground pepper
Irish Blarney Stone Bars

PREHEAT oven to 350. In a large bowl, cream butter and sugar
- 1/2 cup butter or margarine, softened
- 3/4 cup packed brown sugar
- 2 each eggs
- 1 tablespoon milk
- 1 1/2 teaspoons vanilla
- 3/4 cup flour
- 3/4 cup quick-cooking oats
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup English toffee, crumbled
- 1/3 cup chopped pecans
- 4 drops green food coloring
- 3/4 cup prepared vanilla frosting
Apple Cake

LET apples sit in sugar and cinnamon for awhile
- 4 cups apples peeled and chopped
- 2 each eggs
- 2 cups sugar
- 2 teaspoons cinnamon
- 1/2 cup oil
- 1 cup nuts
- 2 cups flour
- 2 teaspoons baking soda
- 3/4 teaspoon salt
- butter and flour
Sweet Potato Veggie Burger (skinny)

Bake sweet potato. Peel, place in large mixing bowl
- 2 cans cannellini white beans, drained
- 1 large sweeet potato, baked/peeled/mashed (about 2 c)
- 2 T tahini
- 2 T maple syrup
- 1 t lemon pepper seasoning or cajun seasoning
- 1/4 c wheat flour
- optional cayenne, black pepper
- panko crumbs
- safflower oil for pan
- whole wheat buns
- dijon mustard, avocados, onion, olive oil
Seasoned Chicken Strips (skinny)

In a shallow bowl, combine the egg substitute, mustard and garlic
- 1/3 c egg substitute
- 1 T prepared mustard
- 1 garlic clove minced
- 3/4 c dry bread crumbs
- 2 t dried basil
- 1 t paprika
- 1/2 t salt
- 1/4 t pepper
- 1 lb chicken tenderloins
Spinach Artichoke Alfredo Pizza

Preheat oven to 425 if youre using homemade dough
- 1/2 pint(1 c) heavy cream
- 1/2 c butter
- 2 T cream cheese
- 3/4 c grated parmesan cheese
- 1 t garlic powder
- 1 1/2 c mozzarella cheese shredded
- 6 oz fresh spinach, roughly chopped
- 1 can of artichoke hearts, rinsed and squeezed dry, chopped
- your favorite pizza crust
Baked Oatmeal Brulee

Heat oven to 350. Spray 8 inch square glass pan with cooking spray
- 2 c quick quaker oats, or 2 1/4 c old fashioned oats, uncooked
- 1/3 c granulated sugar
- 3 1/3 c fat free milk
- 1/2 c liquid egg substitute with yolk or 2 eggs slightly beaten
- 2 t vanilla
- 1/3 c firmly packed brown sugar
Amazing Muffin Cups

In a bowl, combine the hash brown, butter, salt and pepper
- 3 c frozen hash browns, thawed
- 3 T melted butter
- 1/8 t salt
- 1/8 t pepper
- 14 links breakfast sausage
- 6 eggs
- 2 c shredded 4 cheese Mexican blend cheese
- 1/4 c chopped red bell pepper
- chopped or fresh chives or green onion
Crescent Pie Bites

Preheat oven to 375 and spray two muffin tins with Pam
- 21 oz can of pie filling (any flavor)
- 2 Tubes crescent rolls (large)
- 1 c powdered sugar
- 2 T milk
Chocolate Bundt Cake (skinny)

If you have a specialty olive oil store near you its a real treat to taste all the different oils
- 1 c sour cream (fat free is good)
- 3/4 c blood orange olive oil
- 4 beaten eggs
- 1 large chocolate sugar free instant pudding
- 1 chocolate cake mix
- 1/2 c warm water
- 1/2 c chocolate chips
