Maple Ginger Sweet Potatoes

Ingredients
- 1 1/2 lbs sweet potatoes, peeled and cut into bite size pieces
- 2 med tart cooking apples, such as Granny Smith, cored and chopped (about 2 cups)
- 1/4 c dried cranberries
- 1 1/2 t grated fresh ginger
- 1/2 t salt
- 1/2 t cinnamon
- 1/4 t ground nutmeg
- 1/8 t black pepper
- 1/2 c water
- 1/4 c light pancake syrup

Preparation
Step 1
In a slow cooker combine sweet potatoes, apples, dried cranberried, ginger, salt, cinnamon, nutmeg and pepper. Pour the water and syrup over all in the cooker.
Cover and cook on high for 2-3 hrs or on low for 5-6 hrs.
