French Toast Casserole II

Place cubes in greased 3 qt shallow baking dish
- 16 oz Pepperidge Farm Cinnamon Swirl Bread cut into cubes
- 6 eggs, beaten
- 3 c milk
- 2 t vanilla extract
- confectioner's sugar
Perfect Pizza Dough

Sprinkle yeast on top of warm water and allow to sit while you prepare other ingredients
- 3 1/2 c all purpose flour
- 2 T rapid rise yeast
- 1 c warm water
- 1/2 t sea salt
- 1 1/2 T honey
- 1/3 c olive oil
Cream Soup Substitute

- 2 T butter or margarine
- 2 T flour
- 12 can of skim evap milk
- 1/2 t salt
- 1/4 t garlic powder
- 1 T onion chopped fine or chopped chives if not sensitive
- 1/4 t pepper if tolerated
Bulgarian Potatoes

- 2 c cottage cheese
- 1/2 c melted unsalted butter
- 1 t salt
- 3/4 t black pepper
- 6 med baking potatoes and peel if desired
- 2 large eggs
- 1 c evaporated whole milk
Lasagna Soup

Heat the oil over medium-high heat in a large nonstick saucepot or Dutch oven
- 2 teaspoons olive oil
- 1 pound Italian turkey sausage, casings removed
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 (32-ounce) container chicken broth
- 1 (15-ounce) can tomato sauce
- 1 (14 1/2-ounce) can petite diced tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 4 ounces broken whole-wheat lasagna noodles (about 4 noodles)
- 1/2 cup chopped fresh basil
- 3 tablespoons grated parmesan cheese
- 1/2 cup reduced-fat shredded mozzarella cheese
- 8 Whole-wheat breadsticks or grissini (optional)
Green Rice

Combine all of the above ingredients and place in greased casserole dish
- 6 c cooked rice
- 3/4 c melted butter
- 1 bell pepper, seeded and minced
- 2 small onions, minced
- 1 1/4 c milk
- 1 c minced fresh parsley
- 2-3 c grated cheddar cheese
- 3 eggs, beaten
Mozzarella Garlic Bread

- 1 loaf French bread
- 1/2 c olive oil
- 1 t parsley
- 1 t dried basil
- 1/2 t garlic salt
- 3/4 c shredded mozzarella cheese
Pizza Pasta Salad

Cook the noodles to al dente, rinse with cold water after to stop the cooking process
- 8 oz pkg of spiral garden pasta, cooked al dente
- 10.5 oz container of red grape tomatoes, halved
- 2.25 oz can of sliced black olives, drained
- 8 oz jar of marinated artichoke hearts, drained and cut in half
- 7 string cheese, sliced
- 1/2 c sliced pepperonis or mini pepperonis
- 2/3 c green, yellow, or orange bell pepper, roughly chopped
- 1/4 c red onion, chopped
- 1/2 c grated Parmesan cheese
- 8 oz bottle of zesty Italian dressing
- Italian seasoning to taste
- garlic powder to taste
- salt and pepper to taste
Mexican Beef and Bean Casserole

My family loves casseroles and this hits the spot
- 1 pound lean ground beef
- 2 medium onions finely chopped
- 3 cloves garlic minced
- 1 can refried beans (16 oz)
- 1/4 cup olive oil
- 2 tablespoons canned diced green chiles
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 2 cups tomato sauce
- 1 can Italian tomatoes (14 oz)
- 1 dozen corn tortillas
- 1 cup shredded cheddar cheese
Beef and Vegetable Soup (skinny)

In a large skillet, cook beef and onion over med heat until meat is done
- 1 lb lean ground beef
- 1/2 c chopped onion
- 1 bottle (12oz) beer
- 1 can fat free beef broth
- 1 1/2 c sliced fresh carrots
- 1 1/4 c water
- 1 c chopped peeled turnip
- 1/2 c sliced celery
- 1 can (4oz)mushroom stems and pieces, drained
- 1 t salt
- 1 t pepper
- 1 bay leaf
- 1/8 t ground allspice
