Ingredients

  • 2 stalks celery, cut crosswise into thirds
  • 1 med onion, cut into wedges
  • 1 c water
  • 1/2 t caraway seeds, crushed
  • 1/4 t celery seeds
  • 1/4 t salt
  • 1/4 t black pepper
  • 2 to 2 1/2 lbs bone in turkey breast halves
  • 6 c shredded cabbage
  • 2 c coarsley shredded carrots
  • 6 slices rye bread
  • 6 3/4 oz slices reduced fat swiss cheese
  • 1/2 c bottled low fat thousand island dressing

Step 1

Place celery and onion in a crock pot. Add the water to cooker. In a small bowl combine caraway seeds, celery seeds, salt and pepper. Sprinkle evenly over the turkey. Place turkey on top of the celery and onion.

Cover and cook on low for 7-8 hours or high for 3 1/2 to 4 hours. After that turn to high heat, add cabbage and carrots to the cooker and cook for 30 min more.

Preheat broiler. Using tongs, remove cabbage and carrots from cooker; set aside. Transfer turkey to a cutting board, remove skin and thinly slice or shred. Discard the celery and onion. Place bread slices on a large baking sheet. Broil 3-4 inches from heat for 1-2 min or until tops are lightly toasted. Turn bread slices over and top each with a slice of cheese. Broil 1-2min more or until cheese is melted.

Place 3/4 c turkey on 3/4 c cabbage mixture on each slice. Top with 1 T of dressing.
