Carrot Oatmeal Cookies

Preheat oven to 375. Place butter, brown sugar and white sugar and egg in mixer bowl
- 3/4 c butter
- 3/4 c brown sugar
- 3/4 c sugar
- 1 egg
- 1 c shredded carrots
- 1/4 c water
- 2 c rolled oats
- 2 c flour
- 1 t baking soda
- 1/2 t salt
Baked Potato Salad

Place the potatoes in a greased 15x10x1 baking pan; sprinkle with salt and pepper
- 5 lbs small unpeeled red potatoes, cubed
- 1 t salt
- 1/2 t pepper
- 8 hard cooked eggs, chopped
- 1 lb sliced bacon, cooked and crumbled
- 2 c shredded cheddar cheese
- 1 sweet onion chopped
- 3 dill pickles chopped
- 1 1/2 c sour cream
- 1 c mayonnaise
- 2 to 3 t prepared mustard
Grits Casserole

Cook grits in water for 2-5 min
- 1 1/2 c grits
- 6 c water
- 3 eggs, slightly beaten
- 1 lb cheddar cheese, grated
- 2 t seasoned salt
- 1/4 t pepper
- 2 14oz cans chicken broth

Cheesy Squash Casserole

Preheat the oven to 350 degrees F
- 1 tablespoon vegetable oil
- 6 medium yellow summer squash, thinly sliced
- 1 large Vidalia onion, thinly sliced
- 1 tablespoon butter
- 1/2 cup grated Parmesan
- 1 cup shredded sharp Cheddar
- 1/2 cup sour cream
- Salt and freshly ground black pepper
- 1 sleeve crackers, crushed medium to fine (recommended: Ritz)
Apple Oatmeal Spice Cookies

Heat oven to 350. Lightly spray cookie sheet with nonstick spray
- 2/3 c firmly packed brown sugar
- 1/4 c granulated sugar
- 1/4 c light butter
- 3/4 c unsweetened applesauce or applebutter
- 1 egg
- 2 T fat free milk
- 2 t vanilla
- 1 1/2 c all purpose flour
- 1 t baking soda
- 1 t ground cinnamon
- 1/2 t salt
- 1/4 t ground nutmeg
- 3 c quaker oats, quick or old fashioned, uncooked
- 3/4 c diced dried fruit or raisins
Bucatini with Sausage, Pepper, and Onions

This is one of Rachel Ray's 30 minute meals
- 1/2 lb bucatini pasta
- 1 T olive oil(once around the pan)
- 1 lb bulk sweet Italian Sausage
- 1 lb bulk hot Italian sausage
- 4 garlic cloves, chopped
- 1 large yellow onion, quartered and sliced
- 1 red bell pepper, cored, seeded, and thinly sliced
- 2 cubanelle peppers, seeded and thinly sliced
- 1 can crushed tomatoes
- freshly ground pepper
- 1/3 cup grated Parmesan cheese
- 1/4 c flat leaf parsley, chopped
- 1 c fresh basil, torn or shredded
Toffee Mocha Mousse

in a med saucepan, combine 2 c cream, the chocolate, half of the toffee bars, the espresso powder and salt
- 2 1/2 c heavy cream
- 3 oz semisweet chocolate, chopped
- 4 milk chocolate coated toffee bars (14oz) each, coarsely chopped
- 1 1/4 t instant espresso powder
- 1 pinch salt
- 1 T confectioners sugar
- 1 t vanilla extract
Clover Honey Bread
