- 1 lb fresh green beans, trimmed
- 1/4 cup butter, cubed
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp italian seasoning
- 1/2 tsp lemon juice
- 1/4 tsp grated lemon peel
Turkey Scallopini

Pat turkey dry and season with salt and pepper
- 1 1/2 pounds sliced raw turkey cutlets
- salt and pepper
- 1/2 cup all-purpose flour
- 4 Tbsp olive oil
- 2 garlic cloves, minced
- 1 cup chicken broth
- 1 to 1 1/2 Tbsp fresh lemon juice
- 2 Tbsp capers, rinsed
- 2 Tbsp chopped fresh flat-leaf parsley
- 2 Tbsp unsalted butter
Rigatoni with Meat Sauce

Heat a large saucepan with olive oil
- 1 tablespoon Olive Oil
- 2 pound Ground Beef
- 1 Onion (diced)
- 3 cloves Garlic
- 2 Carrots (small diced)
- 2 ribs of Celery (small diced)
- 1 28-ounce can Whole Plum Tomatoes
- 1 cup Dry Red Wine
- 1 Fresh Bay Leaf
- 6 sprigs Fresh Oregano
- Salt to taste
- 1 cup Flat Leaf Italian Parsley (torn)
- 1/2 cup Parmesan (grated)
- 2 tablespoon Unsalted Butter
- 2 pound Rigatoni

Preheat oven to 350F. Line a cupcake pan with 12 paper muffin liners
- 1 cup all-purpose flour
- 1/4 cup whole-wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup sugar
- 2 eggs
- 1/2 cup canola oil
- 1 1/2 tsp vanilla
- 1 cup grated zucchini (about 1 small one)
- 1 cup grated carrot
Healthy Chicken Pot Pie

Cook and drain vegetables as directed on bag
- 1 bag (12 oz.) frozen mixed vegetables
- 3 TBL all-purpose flour
- 1/2 tsp salt
- 1/4 tsp poultry seasoning
- 1/4 tsp pepper
- 1 1/4 cups fat-free milk
- 1/2 cup finely chopped onion
- 1 can (10 3/4 oz.) condensed 98% fat-free cream of chicken soup
- 1/4 cup fat-free sour cream
- 4 boneless skinless chicken breasts (1 1/4 lb), cooked, cut into bite-size pieces (about 4 cups)
- 1 box pie crusts, softened as directed on box
