WW Taco Casserole

Preheat your oven to 375°F (190°C)
- 1 pound lean ground turkey or chicken
- 1 small onion, diced
- 1 packet (about 1 oz) taco seasoning mix (you can use reduced-sodium if preferred)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup salsa
- 1 cup reduced-fat shredded cheddar cheese
- Cooking spray
- Optional toppings: chopped lettuce, diced tomatoes, sliced black olives, chopped green onions, non-fat Greek yogurt or light sour cream
Minestrone Soup

Heat the olive oil in a large pot over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 stalks celery, diced
- 1 large carrot, diced
- 1/3 pound green beans, trimmed and cut into 1/2-inch pieces (about 1 1/2 cups)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Kosher salt and freshly ground pepper
- 1 28 -ounce can no-salt-added diced tomatoes
- 1 14 -ounce can crushed tomatoes
- 6 cups low-sodium chicken broth
- 1 15 -ounce can low-sodium kidney beans, drained and rinsed
- 1 cup elbow pasta
- 1/3 cup finely grated parmesan cheese
- 2 tablespoons chopped fresh basil
Italian Meatballs

These are my idea of "perfect" meatballs
- 1 lightly packed cup of sliced white sandwich bread, torn into small pieces, crusts removed (Note 1)
- 1/2 cup grated onion (brown, white or yellow)
- 14 oz / 400 g ground beef (beef mince)
- 3 oz / 100g ground pork (mince) or substitute with ground beef (beef mince) (Note 2)
- 1 egg
- 1/4 cup fresh parsley, finely chopped (Note 3)
- 2 garlic cloves, minced
- 1/4 cup Parmigiano-Reggiano (or parmesan), freshly grated
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1 1/2 tbsp olive oil
- 1 tbsp olive oil
- 3/4 cup onion, finely chopped (white, brown or yellow)
- 2 garlic cloves, minced
- 24 oz / 700 g tomato passata (also known as Tomato Puree in America - Note 4)
- 1/4 cup water
- 1 tsp red pepper (chili) flakes
- 3 tsp dried Italian herb mix (parsley, basil, thyme, oregano)
- 1 tsp salt
- Black pepper
- Pasta of choice (I like spaghetti and twirls!)
- Parmigiano-Reggiano (or parmesan), freshly grated
- Parsley, finely chopped (optional)

Add the beef and pork to a medium bowl and break up into smaller chunks, aiming for an even mix
- 1/2 pound ground beef chuck, 85 % lean
- 1/2 pound ground pork (or turkey or veal)
- 1/4 cup Parmesan cheese, grated
- 1/4 cup heavy cream
- 1 large egg, beaten
- 2 tbsp minced fresh parsely
- 1 tbsp finely grated onion (it will be mush)
- 1 clove garlic, grated (small - medium in size)
- 1/2 tsp salt

- 1/4 cup flour
