- 1 1/2 cups cranberries
- 1 Granny Smith apple, cored and diced, skin left on
- 1 Gala apple, cored and diced, skin left on
- 1 Red Delicious apple, cored and diced, skin left on
- 1 Bartlett Pair, cored and diced, skin left on
- 1/2 cup plus 2 tablespoons granulated sugar, divided
- 7 rosemary sprigs
- 1 bottle white wine, Pinot Grigio
- 1 cup club soda
- 1 cup apple cider
- 2 tablespoons turbinado sugar or raw sugar

Step 1 - Preparing the cauliflower: Cut and break the heads into ½- to ¾-inch florets

- 4 tablespoons extra-virgin olive oil
- 1 cup water
- 1 cup heavy cream
- 2 teaspoons fresh lemon juice, plus extra as needed

- SALAD
- 1 pkg (7 oz.) tri-colored rotini pasta
- 1/2 cup chopped green pepper
- 1/2 cup chopped red pepper
- 1 small red onion, sliced
- 1 (2 oz) can sliced black olives
- 1/4 cup minced fresh parsley
- DRESSING
- 1/4 cup parmesan cheese
- 1/2 cup olive oil
- 1/4 cup cider or red wine vinegar
- 1 garlic clove
- 1 1/2 tsp ground mustard
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp salt
- dash of pepper
Creamy Sun Dried Tomato Parmesan Chicken (No Cream)

A Creamy Sun Dried Tomato Parmesan Chicken with Mushrooms that is Gluten Free and made with NO HEAVY CREAM
- 2 large boneless and skinless chicken breasts , halved horizontally to make 4 fillets
- 2 tablespoons Tapioca flour (or all purpose or plain flour/s)
- 2 tablespoons finely grated fresh Parmesan cheese (do not include for dairy free option)
- 1 teaspoon salt
- Cracked pepper
- 2 tablespoons reserved sun dried tomato oil (or olive oil)
- 2 tablespoons minced garlic
- 200 g | 7oz jarred sun dried tomato strips in oil , drained (reserve 2 tablespoons of oil for cooking)
- 1 cup sliced mushrooms (250 g | 8 oz)
- 1 1/2 cups evaporated milk (reduced fat or full fat milk)*
- 1 tablespoon cornstarch (cornflour) mixed with 2 tablespoons of milk**
- 1/3 cup fresh grated Parmesan cheese (do not include for dairy free option)
- 2 teaspoons Italian herbs (optional for added flavour)
- 2 tablespoons fresh shredded basil , to serve

- 1/2 cup flour
- 2 eggs, beaten
- 1 1/5 cups bread crumbs
- 1/2 Tbsp garlic powder
- 1/2 tsp dried oregano
- 2 small eggplants, peeled and cut lengthwise into 1/2-inch slices
- 1 cup olive oil
- CHEESE:
- 1 egg, beaten
- 1 carton (15 oz.) ricotta cheese
- 1/2 cup plus 2 TBL parmesan cheese
- 1 TBSP dried basil
- 1/4 tsp pepper
- 4 cups shredded part-skim mozzarella cheese
