- 2 teaspoons minced garlic (I use the kind in a jar)
- 3 tablespoons extra-virgin olive oil
- 1 ⁄4 cup grated parmesan cheese
- 2 1⁄2 cups minced roma tomatoes (cut so fine its almost a paste)
- 1 ⁄3 cup thinly sliced fresh basil leaf
- 2 tablespoons balsamic vinegar
- 1 ⁄2 teaspoon salt
- 1 teaspoon fresh ground pepper

Chicken and Mushroom Casserole can be made ahead of time and kept in the refrigerator until you are ready to bake
- SAUCE:
- 4 to 5 large chicken breasts, trimmed and cut into 1 -inch thick strips
- Salt and pepper to taste
- 1 cup all-purpose flour to coat the chicken
- 6 tablespoons olive oil, divided
- 1 pound fresh mushrooms, thickly sliced
- 1 medium onion, finely diced
- 3 garlic cloves, minced
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1 tablespoons lemon juice
- 1 cup half and half (or 1/2 cup milk + 1/2 cup heavy cream)

BLT Bow Tie Pasta Salad

Cook pasta according to package directions
- 2-1/2 cups uncooked bow tie pasta
- 6 cups torn romaine
- 1-1/2 cups cubed cooked chicken breast

Chicken Enchilada Stuffed Zucchini Boats

For the enchilada sauce: In a medium saucepan, spray oil and sauté garlic
- For the enchilada sauce:
- olive oil spray
- 2 garlic cloves, minced
- 1 or 2 tbsp chipotle chile in adobo sauce
- 1-1/2 cups tomato sauce
- 1/2 tsp chipotle chili powder
- 1/2 tsp ground cumin
- 2/3 cup chicken broth
- kosher salt and fresh pepper to taste
- For the zucchini boats:
- 4 (about 32 oz total) medium zucchini
- 1 tsp oil
- 1/2 cup green onions, chopped
- 3 cloves garlic, crushed
- 1/2 cup diced green bell pepper
- 1/4 cup chopped cilantro
- 8 oz cooked shredded chicken breast
- 1 tsp cumin
- 1/2 tsp dried oregano
- 1/2 tsp chipotle chili powder
- 3 tbsp water or fat free chicken broth
- 1 tbsp tomato paste
- salt and pepper to taste
- For the Topping:
- 3/4 cup reduced fat shredded sharp cheddar
- chopped scallions and cilantro for garnish
MEXICAN CASSEROLE

- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning
- 1 (15 ounce) can refried beans
- 2 cups Colby jack cheese
- 1 cup salsa
- 1 (2 1/3 ounce) can sliced black olives (drained)
- 1 tomato (chopped)
- 2 cups corn chips (crushed)
CAJUN CHICKEN STUFFED WITH PEPPER-JACK CHEESE & SPINACH

- 1 lb Boneless, skinless chicken breasts
- 4 oz Pepper-jack Cheese, shredded (you can use up to 6 oz
- 1 cup Frozen Spinach, thawed and well-drained
- Sea Salt, to taste
- Freshly Ground Black Pepper, to taste
- 3 Tbsp Cajun Seasoning
- 1 Tbsp Italian-style Dry Breadcrumbs
- Lots of Toothpicks
- 2 Tbsp Olive Oil

- 1/4 cup warm water (about 110 degrees)
- 1 package active dry yeast
- 2 cups warm milk (110 degrees)
- 2 tablespoons butter or margarine, melted and cooled (or use salad oil).
- 2 teaspoons salt
- 2 tablespoons granulated sugar
- 6 to 6 1/2 cups all purpose flour, unsifted
