Beef and Bean Burritos Recipe

In a Dutch oven, cook beef over medium heat until no longer pink; drain
- 2 pounds ground beef
- 2 cans (16 ounces each) refried beans
- 3 cups (12 ounces) shredded Mexican cheese blend or cheddar cheese
- 1-1/3 cups enchilada sauce
- 1/2 cup water
- 1/3 cup chopped onion
- 2 tablespoons chili powder
- 1 tablespoon garlic powder
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 16 flour tortillas (10 inches), warmed
- Optional toppings: shredded Mexican cheese blend, sour cream, shredded lettuce, chopped tomatoes and sliced ripe olives
Soy Cream Sauce

Mix ingredients together
- 1 cup soy beans, soaked
- or 1-1/2 cups tofu, or 3 cups plain, unsweetened soy milk.
- Water to make 4 cups of sauce.
Waldorf Salad

In a medium sized bowl, whisk together the mayonnaise (or yogurt), lemon juice, salt and pepper
- 6 Tbsp mayonnaise (or plain yogurt)
- 1 Tbsp lemon juice
- 1/2 teaspoon salt
- Pinch of freshly ground black pepper
- 2 sweet apples, cored and chopped
- 1 cup red seedless grapes, sliced in half (or 1/4 cup of raisins)
- 1 cup celery, thinly sliced
- 1 cup chopped, slightly toasted walnuts

- Glaze Ingredients:
- 1 1/2 Tsp Sea Salt
- 1/2 tsp Black Pepper
- 1 Tsp Ground Cumin
- 1 Tsp (heaping) Chili Powder
- 1 Tsp Cinnamon
- 1 Pork Tenderloin 2 1/2 to 3 lbs cut into quarters or equal lengths

- 1 Cup Packed brown sugar
- 2 Tbsp Minced Garlic or Garlic Powder/Salt
- 1 Tbsp Hot Sauce (Optional)

Cheese Sauce

- For lite sauce:
- 1 Cup Raw Cashews
- 2 cups water
- 1/2 large or 1 small red bell pepper (or 1/4 cup canned pimentos or red peppers)
- 1-1/2 teaspoon salt
- 2 teaspoons onion powder
- 2 tablespoons food yeast flakes (optional)
- 1/2 teaspoon garlic powder
- Use only 1/2 cup cashews
- 1 tablespoon cornstarch
Avocado Strawberry Spinach Salad with Poppyseed Dressing

Toss all ingredients together with your desired amount of dressing until combined
- WHITE BALSAMIC VINAIGRETTE INGREDIENTS:
- 6 cups fresh baby kale (*or see note below for using other kinds of kale)
- 1 pint strawberries, hulled and sliced
- 1-2 avocados, peeled, pitted and diced
- 4 ounces crumbled goat cheese (or other soft cheese)
- 1/4 cup chopped pecans, toasted
- half a small red onion, thinly sliced
- white balsamic vinaigrette
- If you choose to use traditional kale, pour an extra few teaspoons of oil onto the greens first and massage it into them with your hands for 1 minute to soften.
- 1/2 cup extra virgin olive oil
- 1/4 cup white balsamic vinegar
- 3-4 tablespoons honey
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly-cracked black pepper
