Spiced Apple Cider

Tie up Cinnamon Sticks and Whole Cloves into Cheesecloth or add loose and strain when done
- 2 Quarts Apple Cider {I like Tree-Top Apple Cider}
- 1/4 cup packed Brown Sugar
- 1/8 tsp. ground Ginger
- 1 Orange ~ unpeeled, and cut into wedges
- 2 Cinnamon Sticks
- 1 tsp. Whole Cloves
- Small square of Cheesecloth
Spiced Pretzels

Great snack to have on hand for a party or just snacking on
- 2 Pounds of pretzels
- 1 1/2 Cups popcorn oil
- 2 Tablespoons Dill
- 2 Teaspoons garlic (granulated) or garlic salt
- 1 Package dry Ranch dressing
Persimmon Pudding

Preheat oven to 350 degrees
- Lemon Sauce:
- 1 cup sugar
- 1 1/2 cup persimmon pulp, pealed and deseeded
- 1 cup flour
- 2 teaspoons baking powder
- 2 tablespoons butter, melted
- 1 cup nuts
- 1 cup raisins
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 cup cold water
- 1/3 cup sugar
- 1 to 2 tablespoons cornstarch
- lemon to taste (2 small or one large lemon)
- Bourbon Sauce:
- 1 cup cold water
- 1/3 cup sugar
- 1 to 2 tablespoons cornstarch
- 1/4 cup bourbon, or more is so desired per your taste
- cinnamon to taste
- 2 tablespoons butter
- 1/4 teaspoon vanilla
Rotel Cheese Dip

Brown sausage Drain excess grease Add cream cheese and cook until melted Add Rotel cheese Mix well Serve with warm
- 1 lb bulk sausage
- 2 8 oz packages cream cheese
- 1 10 oz Rotel cheese with liquid drained
Batter Dipped Deep Fried Cauliflower

Preheat fryer oil to 375. Place the beaten eggs, milk and salt in a shallow bowl (or a large baggie)
- 1 head cauliflower, washed and broken into bite-size flowerets
- 2 eggs, beaten
- 1 tablespoon milk
- 1 ⁄4 teaspoon salt
- 1 1⁄2 cups flour
- 2 tablespoons shredded Parmesan cheese
- 1 ⁄4 teaspoon garlic powder
- 1 ⁄2 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 ⁄8 teaspoon paprika
- 1 dash cayenne pepper (use more if you like spicy stuff)
- 1 ⁄4 teaspoon black pepper
- oil (for deep frying)
Oven Fried Chicken

Marinade: Mix buttermilk, paprika, salt, garlic powder/salt and cayenne pepper
- Marinade:
- 6 single chicken breasts cut in half crosswise
- 4 tablespoons cooking oil, cooking oil spray or 1/4 cut butter
- 1 quart buttermilk
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Coating:
- 4 cups panko bread crumbs
- 2 1/2 teaspoons salt
- 1 teaspoon powdered thyme
- 1 1/2 teaspoons paprika
- 3/4 teaspoon powdered mustard
- 1 1/2 teaspoon garlic powder/salt
Peanut Butter Mixes

Blend peanut butter with sour cream
- Tangy spread:
- 2 tablespoons peanut butter
- 3 tablespoons sour cream
- 2 tablespoons minced ripe olives
- 1/4 teaspoon salt
- 1 teaspoon minced onions
- Sweet spread:
- 1 tablespoon cherry or strawberry preserves
- 1 tablespoon cream cheese
Dorito Casserole, Layered

- 1 family size bag Doritos, any flavor (I used Nacho Cheese)
- 1 onion diced
- 1 pound lean ground beef
- 1 clove garlic minced
- 1 cup salsa
- 1 package low sodium taco seasoning or homemade taco seasoning
- 1 cup sour cream
- 1 can cream of chicken or mushroom soup
- 2 cups shredded cheese (I used tex mex blend or cheddar)
- OPTIONAL TOPPINGS
- Lettuce
- Tomato
- Olives
- Sour Cream
Whiskey Steak Sauce

In a skillet, melt 2 tablespoons of butter over medium heat
- 5 tablespoons butter (divided)
- 3 tablespoons diced onions
- 1/4 cup whiskey
- 1/4 cup beef broth
- dash of salt
- Fresh ground pepper to taste
- 1/4 cup light cream
Pork Tenderloin with Creamy Marsala Sauce

Preheat oven to 390F. Sprinkle pork with salt and pepper
- 1 tbsp olive oil
- 1 lb pork tenderloin (Note 1)
- CREAMY MARSALA SAUCE
- 2 tbsp butter (salted or unsalted)
- 5 oz mushrooms , sliced (I used Swiss Brown)
- 1/4 cup finely chopped shallots or onion
- 1 garlic clove , minced
- 1 1/2 tbsp flour
- 1/2 cup marsala (Note 2)
- 2 cups chicken broth , low sodium
- 5 tarragon leaves (optional) (thyme is also good) (Note 3)
- 1/4 cup cream
