  • Cake:
  • 1 cup butter
  • 6 ounces cream cheese
  • 6 eggs
  • 2 cups sugar

  • 1/4 cup coconut milk or cream of coconut (optional)
  • Can use 1/2 teaspoon vanilla and 1/2 teaspoon coconut extract
  • Frosting:
  • 1/4 cup butter, softened
  • 4 ounce cream cheese, softened
  • 1/2 teaspoon vanilla or coconut extract
  • 1 1/2 cup confectioners sugar
  • 1/2 cup coconut for toasting to sprinkle on top
  • This can be doubled
  • Note: Add a few tablespoons milk, cream or coconut milk to make frosting thinner.
