Banana Bread

Line pans with wax paper oil the sides
- Combine :
- 1 1/2 c. sugar
- 1/2 c. shortening (melted)
- 1 c. mashed bananas (approx. 3)
- 1/2 c. sour milk (1/2 c. milk and 1/2 T lemon juice)
- 2 eggs
- Cream together until smooth
- Mix separate
- 2 c. flour
- 1 tsp. Soda
- 1/2 tsp. Salt
- 1 tsp. Vanilla
- Add to wet mixture. Mix for 3-5 minutes
Honey Lime Chicken Enchiladas

Whisk honey, lime juice, chili powder and garlic powder together in a large mixing bowl
- 3 Tablespoons honey
- 2 1⁄2 Tablespoons lime juice
- 1 ⁄2 Tablespoon chili powder
- 1 ⁄4 teaspoon garlic powder
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 ⁄2 (16 ounce) can green enchilada sauce
- 4 6 flour tortillas
- 1 cup Monterey jack cheese, shredded
- 1 ⁄2 cup heavy cream
Skillet Lasagna (20 minutes)

Brown ground beef in a small pan
- 1/2 lb lean ground beef
- 1/2 (12 oz) package bowtie noodles, uncooked
- 1/2 (26 oz) jar of your favorite spaghetti sauce
- 1/2 Tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/2 teaspoon Italian Seasoning
- 1/4 cup mozzarella cheese
- 1/4 cup sour cream
Grilled Potatoes and Onions

Tear sheets (1 per person) of aluminum foil into about 16” pieces
- 1 potato per person (any kind of potatoes work; for the sake of sentimentality, I'm partial to Russetts, although red and Yukon Gold potatoes are so smooth and delicious)
- 1/2 small onion per person (the one pictured is a little large because I used some onions in the corn)
- 1 Tbsp. butter per person, cut into pieces
- 1/4 tsp. salt per person
- Freshly-ground black pepper
- Smoked paprika
- Aluminum foil
Crock Pot Cinnamon Rolls

Forget frozen cinnamon rolls, this crock pot cinnamon roll recipe is deliciously simple
- GLAZE:
- 1 can biscuits, try Rhodes frozen rolls
- 1/4 cup butter, melted
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- Pecan pieces, optional
- 1 1/3 cup powdered sugar
- 2 tablespoons milk
Vanilla Ice Cream

- 4 cups (2 pints) half and half or light cream
- 1 (14 ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
- 2 Tablespoons vanilla extract
Parmesan and Herb Crescent Dinner Rolls

- 1 (8 oz) can refrigerated crescent dinner rolls
- 3 Tablespoons grated Parmesan cheese
