Avocado, Cream Cheese, and Salsa Pockets

1. Heat oven to 400F and spray two baking sheets with cooking spray
- 1 large sheet puffed pastry, thawed
- 1 ripe avocado, halved and mashed
- 1/3 cup cream cheese
- 1/3 cup salsa
- salt and pepper, sprinkled to taste
- 1 egg, beaten
Pork Chops with Gravy and Fried Potatoes

1. Rinse pork chops and sprinkle with salt and pepper
- 2 pounds boneless pork chops (1 1/2 inch thick)
- salt and pepper
- 1/2 cup flour
- 1 tablespoon butter
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 cup apple juice
- 1/2 cup whipping cream
- 1 teaspoon thyme
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 tablespoons cornstarch
- 3 tablespoons cold water
- dash lemon juice
- 1/2 bag frozen diced potatoes (thawed)
- 3 tablespoons butter
- 1/2 teaspoons smoked paprika
- salt and pepper
White Bean Chicken Chili

1. Heat olive oil in a large Dutch oven or stockpot over medium-low heat
- Topping Ideas:
- 1 rotisserie chicken, shredded
- 2 tablespoons olive oil
- 1 yellow onion, chopped
- 1 red bell pepper, seeded and chopped
- 4 cloves garlic, finely diced
- 1 tablespoon chili powder
- 1 teaspoon oregano
- 2 bay leaves
- 1 can diced green chiles (4.5 oz)
- 1 can diced tomatoes (14 oz)
- 2 cups apple cider or juice
- 3 cups chicken broth
- 2 cans white northern beans, rinsed
- salt and pepper

- sliced green onions
- sliced jalapenos
Sour Cream & Cheddar Chicken Strips

1. Heat oven to 400. Crush potato chips in a large zip-lock bag
- 2-3 cups crushed sour cream & cheddar potato chips
- 1 egg
- 1 Tablespoon milk
- 1 lb chicken tenders (or 2 breasts sliced into strips)

New England Clam Chowder

1. Place all of the chopped vegetables into a medium-sized sauce pan
- 1 cup onion, chopped
- 2 cup potatoes, chopped
- 1 cup celery, chopped
- 2 cans chopped clams (6 oz each)
- 3/4 cup butter
- 3/4 cup flour
- 1 quart half-n-half
- 2 tablespoons red wine vinegar
- 1 1/2 teaspoons salt
- pepper
- oyster crackers (optional)

1. Heat oil in a large skillet over medium-high heat
- 2 teaspoons canola oil
- 4 boneless chicken breast
- 1/4 teaspoon black pepper
