Mini Lasagna Cups

1. Heat oven to 375. Spray a muffin pan with cooking spray and place one won-ton wrap in each cup
- 1 Jar marinara sauce
- 1 container of ricotta cheese (16 oz)
- 2 cups shredded mozzarella cheese
- Parmesan cheese
- 1 package of won-ton wraps
- Italian seasoning (to taste)
- 1/2 lb ground beef/sausage (if desired)
Slow Cooker Beef and Carrot Au Jus

1. Place sliced onions and baby carrots in a greased slow cooker
- 2 lb chuck roast
- 3/4 cup beef broth
- 1 small bag baby carrots
- 1 packet Au Jus
- 1 small onion, sliced
- 1/4 teaspoon pepper
- 1 teaspoon Itlaian Seasoning
- 1 teaspoon minced garlic
Overnight Blueberry French Toast

1. Lightly grease a 9x13 inch baking dish
- 12 slices of bread, cut into 1 inch cubes
- 2 blocks of cream cheese, cut into 1 inch cubes (8 oz each)
- 1 cup blueberries
- 2 cups milk
- 12 eggs, beaten
- 1 teaspoon vanilla extract
- 1/3 cup maple syrup
- Topping
- 1 cup white sugar
- 2 Tablespoons cornstarch
- 1 cup water
- 1 cup blueberries
- 1 Tablespoon butter, salted
Zucchini Parmesan Chicken Nuggets

1. Heat oven to 475. Line a baking sheet with foil and spray with cooking spray
- 1 lb chicken tenderloins, cut into pieces
- 1 cup buttermilk
- 1/2 cup grated zucchini, squeezed dry with a paper towel
- 2 cups cornflakes, finely crushed
- 1/4 cup cornmeal
- 1/4 cup grated parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon kosher salt
- 1 teaspoon pepper
Banana Pie Cups

1. Crush vanilla wafers in a plastic bag and spoon about 1/3 cup into the bottom of a glass
- Crushed vanilla wafers
- Vanilla pudding
- Ripe bananas; sliced
- Whipped topping
Mississippi Pot Roast

1. Place meat and the onion in a 5-6 quart slow cooker
- 3 pounds Beef Chuck Roast or Sirloin
- ½ teaspoon Salt
- ½ teaspoon Pepper
- 1 can (14 oz) Beef Broth
- 1 package Good Seasons Italian salad dressing
- 1 envelope dry "Au Jus" mix
- ½ jar (8 ounces) Pepperoncini Peppers and juice
Roasted Chicken with White Wine

1. Heat oven to 375. 2. Arrange chicken pieces skin side up in roasting pan
- 8-9 chicken pieces, washed & dried
- 2 Tablespoons Italian seasoning
- 2 Teaspoons garlic powder
- 1/2 Teaspoons crushed red peppers
- Salt & Pepper to taste
- 1 1/2 cup white wine
Raspberry Glazed Chicken

1. In a medium bowl, combine the sauce ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons oil (I used coconut)
- Sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 1/3 cup raspberry jam
- 1 tablespoon honey
- 1 tablespoon minces red onion
- 1/2 teaspoon sea salt
- pepper to taste
Bacon Egg and Cheese Ring

1. Heat oven to 375 degrees
- 1 can of crescent rolls
- 5 large eggs; scrambled
- 1 cup of shredded Colby and Monterrey jack cheese
- 8 slices of cooked bacon (I bought the pre-cooked stuff)
- 1 teaspoon of season salt
Extra Crispy Spicy Fried Chicken

1. Place drumsticks in a large zip-lock bag and cover with buttermilk
- 3 eggs
- 1/3 cup water
- 1/2 cup hot sauce (we used Tabasco)
- 4 cups flour
- 1 tablespoon pepper
- 1 tablespoon paprika
- 3 teaspoons cayenne pepper
- 1 quart buttermilk
- Salt, Pepper, and Garlic Powder (to taste)
- 5-7 chicken drumsticks
- Oil, for frying
