Chile-Chicken Enchiladas

These are VERY good, and don't take too much effort to make
- 1 can (19 oz) enchilada sauce (any variety)
- 2 cups diced cooked chicken
- 1 1/2 cups shredded Monterey Jack cheese
- 1 cup sour cream
- 1 can (4.5 oz) chopped green chiles
- 1 package flour tortillas for burritos (8 tortillas; 8 inch)
- 1 cup shredded Cheddar cheese
- Chopped avocado or green onions, if desired
Brown Sugar Meatloaf

- 1 cup whole-berry cranberry sauce
- 1 cup turkey-flavored stuffing mix
- 1/4 teaspoon ground thyme
- 1-1/2 pounds ground turkey
- 1 tablespoon canola oil
- 6 lettuce leaves
- 6 sesame seed hamburger buns, split (or heavy grain bread)
- 6 slices jellied cranberry sauce
- cup **1/3 cup turkey gravy, warmed (optional)
Stove Top Stuffing Meatloaf
