Cheeseburger Soup

1. Brown the ground beef in 3 quart saucepan
- 1 lb ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 4 tablespoons butter, divided
- 3 cups chicken broth
- 4 cups peeled and diced potatoes
- 1/4 cup all purpose flour
- Velveeta processed cheese, cubed (16 oz)
- 1 1/2 cups milk
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup sour cream
Classic Southern Tomato Pie

1. Heat oven to 400. Place the uncooked pie crust in a deep dish pie pan
- 1 deep dish pie crust, partially baked
- 3 medium sized tomatoes, sliced (about 15 slices)
- salt
- 2 tablespoons real bacon pieces, divided
- 1 small onion, chopped
- 1 tablespoon olive oil
- 3 cups shredded mozzarella, divided
- 1 tablespoon sugar, divided (optional)
- black pepper, to taste
- Garlic powder, to taste
- 2 tablespoons of chopped fresh basil
- 1 cup of mayonnaise
- 1/2 teaspoon hot sauce
- 1/8 cup of chopped fresh parsley
Chicken and Broccoli Alfredo Shells

1. Heat oven to 350. Cook shells according to directions on package; drain
- 8 oz medium shells
- 1 bag frozen broccoli florets, thawed (14 oz)
- 2 cups cooked, diced or shredded chicken
- 1 jar Alfredo Sauce (16 oz)
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1/2 teaspoon Garlic Powder
Chicken Thighs with Shallots and Spinach

- 6 boneless skinless chicken thighs
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon pepper
- 1-1/2 teaspoons olive oil
- 4 shallots, thinly sliced
- 1/3 cup chicken broth
- 1 package fresh spinach (10 oz)
- 1/4 teaspoon salt
- 1/4 cup sour cream
