Smothered Burritos

- For the Meat:
- 3 1/2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons onion powder
- 2 teaspoons Mexican oregano, crushed
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon chipotle chile powder
- 1/2 teaspoon ground black pepper
- 1 1/4 pound ground beef
- 1 medium onion, medium diced
- 3 cloves garlic, minced
- 3 tablespoons Spice Blend (recipe included)
- 1/4 cup tomato paste
- 2 cups unsalted beef stock
- For the Spicy Gravy:
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups unsalted beef stock
- 1 (15 ounce) can tomato sauce
- 1 teaspoon sugar
- 3 1/2 tablespoons Spice Blend (recipe included)
- More for the burritos:
- 1 (15 ounce) black beans, rinsed and drained
- 1 1/2 cups prepared Cilantro Lime Rice, Mexican rice, or plain, cooked white or brown rice
- 6 large (10-inch) burrito-style tortillas

Old German Honey Cookies

In a saucepan over low heat, melt together sugar, shortening and honey
- 1 cup white sugar
- 1 cup shortening
- 1 cup honey
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 4 cups all-purpose flour
- 1 teaspoon ground ginger
Apple Kuchen

Found this old recipe that uses yellow cake mix to make the crust
- 1/2 C butter or margarine, softened
- 1 pkg yellow cake mix
- 1/2 C flaked coconut
- 1 (20 oz) can sliced pie apples, well drained OR 2 1/2 C sliced, pared baking apples
- 1/2 C sugar
- 1 tsp cinnamon
- 1 C dairy sou cream
- 2 egg yolks OR 1 egg
- Note: This recipe can be adjusted to use peaches or pears if desired.
