Family-Style Macaroni & Cheese

Cook macaroni according to package directions
- 2 C elbow macaroni
- 2 1/2 TBS butter, divided
- 1 1/2 TBS all-purpose flour
- 1 1/2 C 2% milk
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 1/2 C shredded low-fat cheddar cheese (6 oz)
- 1/4 C dried unflavored breadcrumbs
Skinny Mexican Style Stuffed Peppers

- 5 large bell peppers, use red, orange, yellow or a combination
- 1 pound extra lean ground beef or ground turkey
- 1 cup onions, chopped
- 1 oz package Lawry’s taco seasonings or McCormick gluten-free taco seasoning
- 1 cup water
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (8 oz) tomato sauce
- 1/2 cup corn, fresh or frozen
- Ingredients for Topping: Optional
- 1/3 cup fat-free sour cream or plain yogurt
- 1/3 cup salsa
- Romaine lettuce, shredded
Cowboy Caviar

A fresh, simple dip that can be thrown together in under 15 minutes! This Cowboy Caviar makes a great side dish f
- Salad:
- 3 Roma tomatoes , seeds removed, diced
- 2 ripe avocados diced
- 1 15 oz can black beans , rinsed and drained
- 1 15 oz can black eyed peas , rinsed and drained
- 1 1/2 cups frozen sweet corn , thawed (I just usually toss it in the salad frozen unless I plan on eating it immediately, it thaws quite quickly).
- 1 bell pepper , diced (I used half a green and half a red, but color doesn’t matter)
- 1/3 cup red onion , diced
- 1 jalapeno pepper , seeds removed, diced into very small pieces
- 1/3 cup Cilantro , finely chopped
- Dressing:
- 1/3 cup olive oil
- 2 Tablespoons red wine vinegar
- 2 Tablespoons lime juice (fresh preferred)
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 tsp garlic powder
- Tortilla chips , for serving
Balsamic-Marinated Flank Steak

1. Combine all ingredients in a zip-top plastic bag
- 2 pounds flank steak, about 1 1/2 inches thick
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon coarse salt
- 1/2 teaspoon freshly ground black pepper
- Garlic cloves
Herbed Green Beans

Bring 1/2 inch of water to boil in a 10-inche covered nonstick skillet
- 1 lb green beans
- 2 tsp olive oil or butter
- 3 large thinly sliced shallots
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp grated lemon zest
- 1/4 C thinly sliced basil leaves
- lemon wedges, for garnish
Tomato Basil Chicken Stew

Heat oil in a large stockpot over medium-high heat
- 1 Tbsp. olive oil
- 1 small white onion, chopped
- 2 carrots, peeled and diced
- 2 stalks of celery, diced
- 4 cloves garlic
- 2 (28 oz.) cans whole tomatoes (with their juices)
- 1 (14 oz.) can cannelinni beans
- 3 cups shredded cooked chicken
- 2 handfuls baby spinach
- 1/4 cup roughly chopped fresh basil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes
Tex Mex Casserole

Easy enough for kids to make
- 1 (8 oz) pkg whole wheat elbow macaroni, cooked
- 1 lb lean ground beef
- 1/2 C chopped onion, optional
- 2/3 C water
- 1 (1.25 oz) pkg taco seasoning
- 1 (8 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes
- 1 C red bell pepper, chopped
- 1 (2.25 oz) can sliced black olives
- 1 12 C reduced fat shredded cheddar cheese, divided.
Cheeseburger Slider Caserole

Preheat oven to 350º F and lightly grease a 9x13-inch baking dish with non-stick spray
- Glaze:
- 1 pound ground beef
- 12 dinner rolls
- 12 slices sharp cheddar cheese
- 1 (10 oz.) can diced tomatoes with green chiles, drained
- 3 cloves garlic
- 1 white onion, chopped
- 2 teaspoons Worcestershire sauce
- 1 teaspoon cumin
- 1 teaspoon mustard powder
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon paprika
- 1/2 cup (1 stick) unsalted butter
- 1 tablespoon brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon mustard
- sesame seeds, garnish
Spicy Deviled Eggs

Place the eggs in a saucepan just large enough to hold them in a single layer
- 12 large eggs
- 3 TS mayonnaise
- 2 TBS Dijon mustard
- 1 TBS minced sweet pickle
- Dash of Worcestershire sauce
- Salt and freshly ground black pepper
- Hot red pepper sauce
- 2 TBS chopped fresh parsley, for garnish
- Paprika, for garnish
Cheesy Crockpot Cowboy Casserole

Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoess, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese
