Balsamic Tomato Salad

Simple easy recipe to have fresh tomatoes on the table
- Fresh Tomatoes cut in medium to large pieces/chunks
- Onion (any type based on the flavor you want) chopped (not minced)
- Fresh cilantro cut/chopped
- Balsamic vinegar
- Salt
- Pepper
- All ingredients are measured "to taste"
Slow Cooker Shredded Mexican Chicken

Rub chicken breasts with oil and place in the bottom of your slow cooker
- 2 pounds chicken breasts
- 1 tablespoon olive oil
- 1/2 cup mild salsa (medium if you like spicy)
- 3-4 tablespoons brown sugar **
- 1 4 oz. can mild diced green chilies
- 1 14.5 oz. can diced tomatoes, drained
- 1 tablespoon chili powder
- 1 1/2 teaspoons salt
- 1 tsp EACH ground cumin, garlic pwdr, onion pwdr,
- 1/2 tsp EACH smoked paprika, dry oregano, pepper
- 1/2 teaspoon ground chipotle chili pepper (optional for more heat)
- 1 teaspoons liquid smoke
- Hot sauce to taste
Hot Cheese Dip

Keep this warm in a crock pot
- 1 lb ground (bulk) Italian sausage
- 1 lb lean ground beef
- 2 lb box Velveeta Cheese
- 1 finely chopped onion
- 2 chopped fresh tomatoes
- 1 jar (16 oz) hot salsa, such as Pace Pecante ("hot" is optional. Use milder salsa as desired)

- 4 lb apples, any kind; peeled, with stems and core removed, and cut into quarters.
- 2 C water or cider vinegar (either is fine for cooking the apples)
- 1/2 C sugar
