Avocado and Tomato Salad

- 4 C Avocado, diced medium
- 2 C grape or cherry tomatoes cut in half
- 2 C cucumber diced medium
- 1 C red onion diced small
- 4 TBS fresh cilantro, chopped

Easy Pineapple Upside-Down Cake

1 Heat oven to 350°F (325°F for dark or nonstick pan)
- 1/4 cup butter or margarine
- 1 cup packed brown sugar
- 1 can (20 oz) pineapple slices in juice, drained, juice reserved
- 1 jar (6 oz) maraschino cherries without stems, drained
- 1 box Betty Crocker™ SuperMoist™ yellow cake mix
- Vegetable oil and eggs called for on cake mix box

Heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie pan
- Options:
- 1 box Pillsbury™ refrigerated pie crusts, softened as directed on box
- 1/3 cup butter or margarine
- 1/3 cup chopped onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
- 1/2 cup milk
- 2 1/2 cups shredded cooked chicken or turkey
- 2 cups Green Giant™ Steamers™ frozen mixed vegetables, thawed
- Add thinly sliced celery and saute it with the onion
- Add 1-2 tsp poultry seasoning

We "played" with combining a couple favorite recipes and came up with this one that is easy to do and delicious!
- 1 1/2 lb lean ground beef
- 1 small/medium onion, chopped
- 2 cloves garlic, chopped
- 1 tsp ground cumin (more cumin may be added to taste)
- 1 tsp chili powder
- 1/4 tsp cayenne pepper
- 1 tsp salt
- 1 TBS Worcestershire sauce
- 1 Can (8 oz) tomato sauce
- 1 can (16 oz) stewed tomatoes
- 2 TBS cider vinegar (red wine vinegar or cider vinegar)
- 2 cans beans (your favorite variety)
- 1 tsp oregano
- 1 beef bullion cube
- 1 "can" (16 oz) water
- Optional: For another "depth" of flavor you can add 1/4 cup red wine (dryer than sweet).
