Ingredients
- 1/2 C butter or margarine, softened
- 1 pkg yellow cake mix
- 1/2 C flaked coconut
- 1 (20 oz) can sliced pie apples, well drained OR 2 1/2 C sliced, pared baking apples
- 1/2 C sugar
- 1 tsp cinnamon
- 1 C dairy sou cream
- 2 egg yolks OR 1 egg
- Note: This recipe can be adjusted to use peaches or pears if desired.

Preparation
Step 1
Heat oven to 350 degrees F.
Cut butter into dry cake mix until the mixture is "crumbly".
Mix in the coconut
Pat the mixture lightly into ungreased 13 x 9 x 2 inch baking dish, building sides up for a slight edge.
Bake the crust for 10 minutes
Remove from oven and arrange apple slices on warm crust.
Mix sugar and cinnamon, and sprinkle over the apples.
Blend the sour cream and egg; drizzle the mixture over the apples. (Note: this topping will not completely cover the apples).
Bake for 25 minutes, or until edges of the crust are light brown.
Don't over bake!
