Slow-Cooked Tex-Mex Chicken and Beans

- 1 1 1 cup dried pinto beans, rinsed
- 1 1 1/2 jar (11 ounces) mild or medium salsa (1 1/2 cups)
- 2 2 2 tablespoons chopped canned chipotle chiles in adobo sauce
- 2 2 2 tablespoons all-purpose flour
- 1 1/2 1 1/2 8) pounds boneless, skinless chicken thighs (about 8)
- Coarse salt and ground pepper
- 1 1 1 medium red onion, chopped
- 1 1 1 red bell pepper (ribs and seeds removed), chopped
- 1/4 1/4 1/4 cup reduced-fat sour cream, for serving
- 1/4 1/4 1/4 cup chopped fresh cilantro, for serving
Chicken Adobo

You can substitute chicken with pork shoulder meat or a combination of both
- 1 whole chicken cut up
- 1 cup soy sauce
- 1 cup apple cider vinegar 1 teaspoon lemon juice
- 1/4 cup water
- 1 tablespoon whole pepper corns
- 3-4 whole bay leaves, dried
- 1/4 cup chopped red or yellow bell peppers or 1 whole jalapeno
- 1 medium onion, sliced
- 5 garlic cloves, crushed
- 1/2 teaspoon black pepper
Kielbasa, Potato and Cabbage Soup

Heat the oil in a large Dutch oven over medium-high heat, add the kielbasa and brown
- 2 tablespoons olive or vegetable oil
- 1 1/4 pounds (1 ring) kielbasa, 1-inch dice
- 1 pound (1 large or 2 medium) starchy potato, such as russet, peeled and chopped
- 1 tablespoon paprika, 1 scant palmful
- 1/2 tablespoon coriander, half a palmful
- 1/2 teaspoon ground allspice
- 2 carrots, chopped
- 2 ribs celery, chopped
- 2 cloves garlic, crushed
- 1 onion, chopped
- Salt and freshly ground black pepper
- 1/2 head savoy cabbage, chopped
- A few grates nutmeg
- 1 cup lager beer, room temp
- 4 cups chicken stock
- 2 cups tomato passata or puree
- 1/2 cup creme fraiche (or sour cream)
- 3 tablespoons chopped fresh dill or 1 1/2 teaspoons dried
- Handful fresh parsley leaves, chopped
- 1/2 lemon, juiced

- 3 C all purpose flour
- 6 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 C shortening or butter
- 1 1/2 C milk
Guacamole

- 6 TBS butter or margarine (softened)
- Hershey's Cocoa (or other brand) - 1/3 C for light flavor, 1/2 C for medium flavor, 3/4 C for dark flavor
- 2 2/3 C unsifted confectioners' sugar
- 1/3 C milk
- 1 tsp vanilla
Basque Potato Soup

Heat a large, heavy greased pan over moderate heat
- 1 lb Italian sausage sliced in about 1/2 inch pieces.
- 1/2 C chopped onion
- 2 cans (1 lb ea) tomatoes
- 4 small potatoes, peeled and diced
- 1/4 C chopped parsley
- 1 C diagonally sliced celery
- 2 TBS chopped celery leaves
- 1 12 C water
- 2 beef bouillon cubes
- 1 medium bay leaf
- Salt to taste
- 1/2 tsp dried leaf thyme
- 14 tsp pepper
- 1 TS lemon juice
Turkey Chili

Heat oil over medium-high heat in a large, heavy pot or Dutch oven
- 1/4 C extra-virgin olive oil
- 2 large fresh poblano chiles, seeded and diced
- 1 large onion, chopped
- 1 stalk celery, chopped
- 4 large cloves garlic, smashed and chopped
- 1 1/2 lb ground dark turkey meat
- 1 TBS flour
- 1/4 C tomato paste
- 3 TBS chili powder
- 1 TBS ground cumin
- 1 tsp dried oregano, crushed
- 1/2 tsp cinnamon
- 1/8 tsp ground cloves
- 2 packed tsp dark brown sugar
- Kosher salt and freshly ground pepper
- 3 C low-sodium chicken broth
- 1 (15 oz) can cannellini beans, drained and rinsed.
Signa's Mayonaise Cake
